Yellow Spot Single Pot Still Irish Whiskey
Under the hustle and bustle of cobbled Dublin streets in the early 1900s, a rare whiskey was quietly making a name for itself. The simple act of marking barrels with spots of coloured paint would not only signify their age potential, but would become the namesake for this coveted whiskey, bonded and bottled by The Mitchells – a seventh generation family business. As a Single Pot Still Whiskey, these Spot Whiskeys are made using a unique combination of both malted and unmalted barley. This leads to that silky mouthfeel and the pot still spices that these whiskeys were so renowned for back in the old days. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex Malaga casks contributes exotic characteristics to the whiskey. Aromas on mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. On the palate is a honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Its finish is sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.
Four Pillars Bloody Shiraz Gin
Yarra Valley makes some of the finest wines in the world. In 2015, Four Pillars combined Rare Dry Gin with some of the best Shiraz Grapes in Australia to create Bloody Shiraz Gin for the first time. 2018 release has great depth of colour compared to previous releases. Flavour-wise it's showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.

Aberlour 12 Year Old Double Scotch Whisky
The gateway to double cask maturation, Aberlour 12 year old double cask matured has balanced notes of fruits and spices. Golden amber with hints of ruby red. Soft and rounded with fruity notes of red apples. Sherried character and fruity aromas balanced with a rich chocolate, toffee, cinnamon and ginger spices. Warming and lingering with some smoky notes and gentle pepperiness.
Mackmyra Svensk Rok Single Malt Swedish Whisky
Launched in 2013 and now a regular bottling, this unusual release from the prodigious Swedish distillery is slightly smoky - hence the name "Svensk Rök", meaning "Swedish Smoke". Matured for an undisclosed period in a mix of 30-128 litre casks ranging from American oak, Swedish oak and ex-bourbon saturated with Oloroso, around 70% is peated. One of the tastiest expressions in the Mackmyra line up, Svensk Rok is also one of the best values, boasting melt-in-your-mouth flavours of salted citrus and vanilla along with all the sweet'n'smokey notes you'd expect, but with a twist: Mackmyra employ juniper branches to dry some of the malt, which makes sense, as juniper has been used to season food in Sweden for generations. It comes through at the finish as hints of menthol tobacco, smouldering potpourri and pine. The result is a distinctive local take on Scottish peated styles that really works. 46.1% Alc./Vol.

In 2017, the Tatsumi Distillery opened in Gujohachiman, Japan and uses traditional brewing practices and materials such as copper pot and kabutogama stills to produce high-quality Gin and Absinthe. The kabutogama still is an old method of distillation that was popular until the late 19th century and the owner Mr. Tatsumi is dedicated to reviving this method through his patience and expertise. His passion for creating unique and authentic spirits is gaining recognition from industry peers and consumers alike. Tatsumi, the owner of Tatsumi Distillery, has created an exceptional craft gin using only one botanical, Juniper berry sourced from northern Macedonia, known for its high quality. The juniper berries found in North Macedonia are distinct due to the unique natural terroir, which results in a high concentration of essential oils. These berries grow wild on high mountain slopes that are unpolluted and pristine, making them the ideal choice for crafting the world's finest gin. Tatsumi Distillery Gin is distilled from two different Shochu bases, Sake Lees Shochu & Chicory Shochu, using the traditional Kabutogama still. To ensure consistency, Tatsumi Distillery Gin is handmade in small batches of less than 500 bottles. Tatsumi Distillery Gin has a woody taste similar to that of coniferous trees, along with a subtle hint of citrus and a fruity aroma reminiscent of Ginjo-Sake. The palate is dominated by the clear flavour of juniper berry, which is pleasantly spicy. The aftertaste is complex and rich, with a depth that comes from the carefully selected base spirits.
