Matured for many years in traditional Whisky casks before being finished in sherry casks, this 12 year old single malt from Balvenie is rich and smooth. It's characterised by rich honey sweetness and a delicate layer of Sherry that lingers on the palate.

Established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. At the peak of the Jura distillery's core range (relaunched in mid-2018) sits the Isle of Jura 18 Year Old. This expression aged in American white oak ex-bourbon barrels before enjoying a finishing period in Premier Grand Cru Classé Bordeaux barrels, imparting a rich fruitiness. Dewars 18 Year Old Scotch Whisky is carefully prepared by putting the whisky back into the cask to mature a second time after blending (double-aging). This method allows all of the older and characterful whiskies to mingle before bottling with resulting flavours of nut and marzipan, to name a few.

The fruits from Distillation drift in on an Atlantic breeze and pop on the tongue like champagne bubbles. A combination of ripe green fruit, brown sugar and sweet malt bring closure.

Matured first in bourbon barrels then Oloroso casks, there's no finer example of a sherry cask finish than our 15 Year Old. It's the final three years spent in Oloroso sherry casks that gives Bowmore 15 Year Old the rich, deep colour and robust warming finish.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish.
