SHINOBU (meaning Forbearance in Japanese) Whisky is hand crafted by the creative master blender, Mr. Usami, by carefully selecting whisky from different distilleries which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak.

Fresh wood barrel dominates the spirit with a touch of vanilla and flowers that bring to breath of nectar, maltose, tones of fruits citrus, Mizunara oak & coffee beans; medium wood intergration, then finish with a sweet aftertaste of maltose. Very smooth, rounded full pallet and easy to drink.

The Hibiki 17 Years Old whisky is a meticulous blend of over thirty of the finest single malts from Suntory's two distilleries, Yamazaki and Hakushu, and grain whisky from their Chita distillery, most with an age of well over 17 years.Created in 1989, Suntory artisans perfect this harmonious blend to create a full symphony of delicate flavours and blossoming aromas. The design of the bottle symbolises the 24 seasons of the Japanese lunar calendar.In 2018, Suntory Whisky announced the Hibiki 17 Years Old would be discontinued making this scarce bottle a rare collector's item of enchanting value. Miyagikyo Single Malt is described as soft and fruity.Using less peaty malt, this whisky is distilled in a pot still heated by indirect steam at a low temperature. Miyagikyo Single Malt has an elegant fruitiness and a distinctive aroma with a strong Sherry cask influence.

Apart from Single Malts, Suntory also produces a premium series of blended whiskies under the label 'Hibiki' (meaning 'harmony'), usually containing a high proportion of Single Malt (upwards of 50% according to one of the company's blenders). Thirty different malts are employed from Suntory's three distilleries, most with an age well above 21 years. Hibiki 21 Year Old was, yet again, selected as the best-blended whisky in the world at the World Whisky Awards 2017. Hibiki has been awarded every year at the WWA since 2009. The judges described it as being Elegant, sweet and complex. This whisky is full of dried fruit, orange peel, strawberry jam, and baked apple from start to finish. Smooth, subtle and fairly short. Obvious collector appeal here, but we'd like to imagine this one being appreciated for what's inside the bottle. 43% Alc./Vol.

A 9 year old blended whisky from Chugoku Jozo's interesting Togouchi range. The producers create their expressions with whisky from both Scotland and Canada, and age it in a railway tunnel in Japan.

Kurayoshi are one of a few Japanese small-scale craft (or Ji) whiskies to be released in Australia. Created in the shadow of Mt Daisen, at the Matsui Distillery, the whiskies benefit from the mountain’s crystal clear waters and over a century of expertise. The blenders here often combine malt whisky from Scotland with locally produced whisky. This is not an uncommon practice in Japan, and the exact breakdown typically remains undisclosed. Tasting note: Polished copper. Not vastly different to the 8 year old, showing the same subtle Summer yellow fruits, only softer again and with delicious succulence, a bigger finish and better length. It's delicately oily with cocoa-dusted stewed fruits and buzzing spices through the finish. The balance is perfect here, and it feels older than it actually is. Pick of the bunch. 43% Alc./Vol. Non chill filtered.

Tasting note: Matured in a Bourbon cask. Amber gold. Opens a little shy, but develops with a spicy fruity interplay (dried fruits, plums, apricots?) perhaps a touch of grapefruit, then more nutty and sweet-spicy. All very subtle. Silky and mellow beyond its age statement. A deft burst of spice seals the finish. Possibly less fruity than the 3 year old but with a plusher texture. Quite lovely malt. 43% Alc./Vol.
