KI NO BI (The Beauty of the Seasons) is inspired by tradition and distilled, blended and bottled in Kyoto. We collaborate with the craftsmen and artisans of Kyoto who refine their skills in the legacy of the generations before them, working continuously in the cultural heart of Japan. Japans first dedicated gin distillery was founded with the sole intention of creating the finest gin possible: made from rice spirit and, wherever possible, using locally sourced botanicals, including yuzu, gyokuro tea and sansho pepper. The Founders are inspired by Kyoto culture, art, craftmanship and agriculture.

Penfolds Lunar New Year Bin 389 South Australia Cabernet Shiraz 2019 The great Australian blend from the great Australian winery, the Penfolds Bin 389 is often called Baby Grange. Buy two and open one this year and then a second in twelve years time when the year of the tiger rolls around once more. Bin 389 is the quintessential expression of the Penfolds red wine style. Typically it is fresh, generous and buoyant with ripe dark chocolate, dark berry fruit, beautifully extracted flavours, fine-grained tannins and underlying new oak characters. First produced in 1960, Bin 389 Cabernet Shiraz is nicknamed Poor Mans Grange or Baby Grange and is one of Australias great cellaring red wines. Bin 389 is matured in a combination of new and one and two year old American "ex Grange and Bin 707" hogsheads for 18 months. The best vintages can develop and improve for decades.

A premium seasonal gin made in the style of English sloe gin, supplanting handpicked local Mulberries in the place of the traditional sloes. Local mulberries are steeped in the gin, then pressed by hand; final steps include light filtering before bottling. Naturally sweet, rich and smooth mulberry flavours distinguish this elegant gin. Served with fresh lemon juice, soda/bitter lemon and garnished with fresh berries, mint or basil.

Adelaide brothers, Jon and Con Lioulios own and run Thirty Six Short Distillery from Virginia in South Australia, where they recently launched Australia's first Rakia - partly as a tribute to their late Macedonian father, Pando whose dream was to distil traditional Rakia. The venture is actually named after Pando’s suit size, '36 Short'. A 1200 litre copper pot still also bears his name. The brother's first single malt was released in late 2021, cut back with water sourced from an aquifer that runs directly underneath the distillery. The barrels are locally sourced, x-Shiraz, shaven and charred American oak barrels. This initial maturation is followed by further resting in x Bourbon barrels to add fruity notes, before the liquid is finally returned to the Shiraz casks for a finishing. Advanced in colour, it feels more like a sherry matured Scottish malt than a warm climate Australian whisky. Aromas of oak shavings, pepper, cocoa and a dry nuttiness confirm the wine character, as does the full-bodied delivery: Dried fruits come through at the middle; Cherry ripe chocolate leads the finish where sweeter Bourbon-like notes converge over the wood spices. Even if the oak is a bit overdone, especially after air contact, it's an undeniable success for a first edition. 45% Alc./Vol. Notes from the producers... NOSE: Sweet and fruity on the nose, with tart lime marmalade notes. A faint aroma of fresh cut pine and tropical fruit adds a delicate malt finish. FINISH: A beautiful long finish with a taste of dried mixed fruit. Lingering with notes of apricot and peaches with a warming finish.
