Vasse Felix produces fine Margaret River reds with great balance and style. This traditional blend of Shiraz and Cabernet Sauvignon shows sweet mid-palate fruit with liquorice and spice and good tannin structure. The Tate name is synonymous with Margaret River after John Tate helped create arguable the regions most well-known winery, Evans & Tate. Today, Franklin Tate has brought the Tate name back to life with new, exciting terroir driven wines. Franklin painstakingly selected the very best vineyard sites, those that held unique micro-sites within them to enable him to achieve his goal of producing some of the regions best wines. This Shiraz was picked at optimum ripeness and fermented with 10% whole bunch. French barriques were used in the fermentation process to give a softness to the palate, as was a small percentage of Viognier. The result is a great Margaret River Shiraz with grounded savoury notes along with ripeness and spicy lift.

Dense aromas of plum pudding, dried apricots and eastern spice introduce a voluptuous palate, boasting silky tannin, delicate hints of fresh summer berries and earthier tones of toasted oak and freshly cracked allspice. An excellent example of cool-climate Shiraz with dark black fruit, spice and pepper characters. The oak and tannins are well balanced ensuring that this wine is drinking well now and has plenty of life ahead.

The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Only the best fruit parcels combined with finest French oak lead to a perfumed bouquet of Cassis, ripe berries and cedar. The complex palate shows ripe and silky tannins, pure fruit intensity with red berries and cassis. Its finely structured with long lasting finish of cigar box and vanilla. Drink now or until 2028.

The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation.
