The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

The Macallan Sherry Oak 12 Year Old is matured exclusively in hand-picked sherry seasoned oak casks from Jerez, adding richness and complexity. A matured character, the 12 Years Old delivers rich wood spice and dried fruits and a natural rich gold colour.

To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.

Matured exclusively in the finest sherry oak casks. Vibrant summer fruits burst on the palate, followed by a rewardingly long finish. Natural colour and un-chillfiltered.

Rounded and smoky - like burning Applewood - with creamy toffee, aniseed, treacle and dates. A curious suggestion of juicy fruits, such as peach and banana. With a drop of water, reminders of Ardbeg's classic fragrance lime, pine resin, fennel, saddle soap and tar. A gentle waxiness, like fragrant candle wax, and hints of smoked herbs. An Oa gives a final subtle reminder of the sea with briny notes and seaweed but always accompanied with creaminess. A smooth, creamy texture leads into a huge syrupy sweetness, flavours of milk chocolate, treacle toffee, aniseed, orange and smoky tea leaves. Gentle, sweet spices (nutmeg & cinnamon), some cigar smoke, and a very unusual flavour of grilled artichokes. Wood is always present in the spirit, gently nutty and reminiscent of a carpenter's workshop. A long, sweet finish, with floral overtones, mint toffee and some gentle malty biscuit notes.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Dewars 18 Year Old Scotch Whisky is carefully prepared by putting the whisky back into the cask to mature a second time after blending (double-aging). This method allows all of the older and characterful whiskies to mingle before bottling with resulting flavours of nut and marzipan, to name a few.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

The Glenfiddich 18 Year Old Ancient Reserve is a truly superb single malt aged in Oloroso (Sherry) and Bourbon casks. This has created an amazingly smooth, mellow, and full flavoured whisky.
