A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Our tropical take on a traditional sloe gin; swapping sloe berries for locally grown Far North Queensland Davidson Plums. The plums are steeped for up to 3 months to produce a truly unique sloe style gin. With an earthy aroma that is reminiscent of plum jam, stewed rhubarb and a touch of sweetness. Bushmills Single Malt Whiskey 16 year old is aged for 16 years in a combination of Oloroso Sherry and Bourbon-seasoned casks, then matured for several months in port wine barrels. The unique maturation process gives this single malt its distinct notes of juicy fruits, nuts and spice, as well as a hint of ruby redness. Its best enjoyed neat or over ice.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

The Macallan Sherry Oak 12 Year Old is matured exclusively in hand-picked sherry seasoned oak casks from Jerez, adding richness and complexity. A matured character, the 12 Years Old delivers rich wood spice and dried fruits and a natural rich gold colour.

The Glen Moray 18 year old is a beautiful addition to the Glen Moray Heritage range. Only the very finest American oak barrels have been selected to emphasise the incredibly smooth character and taste of Glen Moray 18 year Single Malt.
