De Iuliis (De - uli - iss) wines are known for their trademark regionality and commitment to showcasing the very best the Hunter Valley has to offer. Their Shiraz is a fine balance between power and subtlety. Spice driven aromas with mild hints of the berry fruit to come on the palate. Blackberry, raspberry and dark cherry come to the fore and are in harmony with the round, soft tannins.

The typical warm, dry microclimate and the rather long autumns favour a slow and thorough ripening of the grapes. There is a long vegetation time of 210-240 days with a maximum humidity of 55-80%. The soil here is chernozems and clay, strewn with marine fossils. The elegant Byzantium wines are originated in this exceptional region, having the Protected designation of origin Dealu Mare. “Byzantium Rosso” embodies the “opulence” of the Byzantine era with a robust and complex structure. Deep ruby red in colour, the wine reveals intense aromas of ripe forest fruits and black plums deriving from the indigenous variety of Feteascã Neagrã (Black Maiden), as well as red and black pepper deriving from the Shiraz. The aromas are well integrated with vanilla and chocolate notes and refined oak-wood. The finish is prolonged with crisp mint and violet notes structured by the Cabernet Franc. Food pairing: This well balanced red wine is the ideal companion to roast beef and chicken, stew and lamb. Its versatility delights your senses in any venison combination. From the stable of Devils Lair, Fifth Leg is a blend of Cabernet, Shiraz and Merlot that is a soft and supple drink-now style. The quality of the Margaret River fruit gives it flavour which will appeal to the serious red wine drinker as well.

Shiraz By Farr is one of Victoria's premier cool-climate Shiraz's, made by the iconic Geelong winemaker, Gary Farr. The nose is incredibly complex showing notes of red and black fruits, spice, black pepper and iodine. In the mouth the wine is incredibly fresh. Wonderfully braced fruit and fine framing tannins and an outstanding length.

From Orange in NSW, this Shiraz is a good introduction to the qualities of this emerging area. It shows aromas of plum and spices and the palate is all about the fruit with little intrusive oak.

A great Margaret River Shiraz with temperate ripening conditions promoting fruit intensity, richness and fine tannins. The palate is restrained and balanced with flavours of plum and aniseed spice.
