The Whistler 5 Year Old Bodega Cask Single Malt is a triple distilled whiskey that has been wholly matured in the finest Spanish Sherry Butts for its whole life. These butts were sourced from our partners in the famed Bodegas of Jerez de la Frontera.

Nose: Salted caramel and vanilla jump out of the glass with light oak spices and undertones of zesty citrus, honey and a hint of nuts. Palate: Honey and creamy vanilla come to the fore with light oak spices that are all followed by the zesty citrus peel. A deliciously drinkable whiskey.

Nose: Apple drops, fresh citrus zest, creamy and luscious toffee undertones with banana, apricot, melon and creamy red raspberries. Palate: Sweet peach on the fore with pear and a bright fresh citrus zest. Malt undertone with creamy vanilla underneath Finish: Long and creamy with hints of pear and citrus zest remaining.

Our Double Barrel has sucked the marrow out of two casks, Bourbon and Oloroso. They each bring their own unique flavour and character. While the Bourbon barrels add, among other things, sweet, smooth vanilla notes, the Oloroso casks layer on those dried fruit and slightly nutty flavours. And of course these are all accented by almost four years resting in Ireland’s mild maritime climate.

While they build their whiskey distillery, they have sourced the finest double and triple distilled malts and a hint of peated malt. Bottled at 46% ABV the whiskey is not chill filtered giving a rich character to a super soft whiskey. Presented in a tall elegant bottle, the Silkie label is reflective of the blue/green colour of the sea at the foot of the Sliabh Liag Cliffs. Redbreast 12 Year Old Irish Whiskey is the quintessential example of premium Irish Whiskey, and considered to be the purest form of the art. With a history dating back to 1903 when John Jameson & Company entered into an agreement with Gilbeys Wines & Spirits Import Company to supply new make whiskey which was then 'bonded' in old sherry and port casks. Single Pot Still whiskey is unique to Ireland and this exciting example is crafted from both malted and unmalted barley and then triple distilled in a traditional copper still. The result is a whiskey of unrivalled richness, complexity and smoothness. Hints of creaminess on the finish round out an true Irish Whiskey of pedigree.

Pot still is an equipment used to distill spirits. It is a slower process and had to be done in batches in a single distillery. Green Spot is an Irish whiskey that mixed pot still whiskeys aged between 7 and 10 years, in order to find the perfect balance on the smell and taste. It opens up with notes of orchard fruits, sweet spices and toasty oak. Full body and a lasting pleasant finish with flavours of warm spices and barley.

Sliabh Liag Distillers have taken a bold step with The Legendary Dark Silkie in reintroducing consumers to rich, smoky, peated Irish whiskey. Inspired by Donegal whiskeys of days gone by, they have sourced the finest double distilled single malts and triple distilled peated single malts with soft grain whiskey. The Legendary Dark Silkie is the second release in the Silkie Whiskey Collection. Continuing to draw inspiration from the rich folktales of the Silkie Seals, often told by the glow of its core triple distilled peated single malt which is matured malt is peated to 55ppm which after triple distillation sweet smoky flavour. A blend of Double distilled, Triple distillied 55ppm single malt and Corn grain column still.Nose: Fresh apple and pear with spiced dry smoke and welcoming virgin oak Taste: The Dark Silkie's signature softness develops to a rich salted caramel sweetness. A 12 Year Old Single Malt aged in bourbon casks for 12 years giving the whiskey a honied sweetness, rich vanilla, oak spices and a herbal undertone. On the nose this Whiskey gives a natural honied sweetness with rich vanilla, oak spices and a herbal undertone. These notes develop to orchard fruits of white peach, apple & pear. The taste offers citrus hints of lemon, dried orange and a touch of honeysuckle. These flavours will evolve giving way to a silky vanilla palate with a tingle of spiced pear and warming notes of ginger and clove to finish.
