Full term in first-fill bourbon, sherry, tempranillo and French wine casks for a decade or more. Bottled at 50% alc. vol. using Islay Spring water. Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the frigid winters and using specific filtration types for each whiskey they make. The Sour Mash is their original recipe whiskey.

Patrón Añejo is delicate blend of uniquely aged tequilas. All the tequilas are aged in small white oak barrels for a minimum 12 months. As in many premium red wines, the blends must be adjusted for each vintage. The same care and attention is paid when blending Patrón Añejo making it smooth, distinctive and extraordinary.

Dictador 20 year old Rum 700mL is made from the fermentation of virgin sugar cane honey that has been distilled in both copper alembic and steel continuous column to achieve a smooth medium body rum. Intense dark amber with soft vanilla, smoky honey, toffee and oak on the nose. Massive flavour, strong and textured with caramel and cocoa.

Dewazakura and the local agricultural bureau developed regional sake rice called Dewa Sansan which is used in this sake. A very soft and deep flavoured style with good zingy acidity, and a clean and fresh finish.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

With an average age of around 15 years and made from the finest terroirs in Cognac; Grande Champagne and Petite Champagne, predominantly distilled in 1990, the Selections unique character comes from long ageing in oak barrels, which adds incomparable fullness and sweetness. Aromas of pears, apples, molasses, creme brulee, and vanilla. The palate is supple, plump, and grapey with a mouth coating texture, dried fruits and a slightly sweeter and lingering finish that is satin smooth.
