Vibrant in appearance and pale lemon in colour. An array of subtle and intricate notes of dried pear, honeysuckle, lemon /lime citrus oils, peach, minerals, nuts and caramel. Very silky in the mouth with a lemon curd tart zest and richness. The talc-like minerality, fine acidity and guiding oak add length, definition and structure to the palate. This wine is full of mouthwateringly beautiful flavours, great subtlety, finesse and complexity.

Fermented 80% in stainless steel tanks and the rest in French oak barriques, Vinaceous Shakre Chardonnay has been designed to display the strengths of modern Margaret River Chardonnay. This wine of merit features a pale lemon colour and opens with bright and clean fruit aromas accompanied by subtle oak nuances. Juicy and structured on the palate, the wine offers a crisp and clean finish that lingers on. It's a casual, uncomplicated accompaniment to a variety of meals, especially mushrooms.

Capel Vale is family-owned and one of the pioneers of the West Australian wine industry, first planting vines in 1974. And the duck? It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. A fine and quite flinty modern expression of Margaret River Chardonnay. Finer and leaner it might be in some ways, but the unmistakable power and persistence of the region still triumphs. Complex mealy grapefruit and roasted nut characters on the nose, and a deep and richly intense palate power through to the finish.

The Kevin John Chardonnay is Cullens flagship white from their biodynamic vineyards. A refined and elegant style brimming with white peach and citrus, showing bakery nutty complexity and deft oak integration. The wine is named in honour of Vanya Cullens father, the late Kevin John Cullen. Grapes are harvested on a flower or fruit day and whole-bunch pressed to obtain the highest quality juice. It is then barrel fermented with native yeasts in French oak barriques and matured for approximately 7 months in one- third new and two-thirds seasoned oak barrels.
