Triple maturation is the secret behind the award-winning taste of Whyte & Mackay. Featuring ginger cake, orange fondant, caramelised pear and brandy snaps on the nose with fresh ground coffee, chocolate ganache and cinnamon apple on the palate. Initially matured in American white oak, this limited 21 Year Old edition 2015 release is transferred into first-fill Matusalem oloroso sherry butts. The Dalmore whisky spends a decade in these exceptional casks for an outstanding finish with Oxford marmalade, macerate cherries and soft liquorice.

Dimple 15 Year Old Scotch has fragrant tones that are almost tones of perfume mellowing to a sweet buttery aroma. Flavoursome and light, nothing spicy or harsh. The finish is delicate and maybe a gesture of dark chocolate hiding in there.

Tasting note: Matured in first-fill ex-Bourbon barrels for seven years before being transferred to smaller 125 litre Quarter casks for a further two years. The process amplifies the impact of the wood. Fumey alcohol gives way to hints of dried coconut, raisin chocolate, pine needles and a vaguely cider-like fruitiness. It's a big, chewy malt with a fabulous fanning flavour rush and impressive control. Summer pudding and vanilla come through on the finish before the aftertaste ends crisp and pleasingly astringent.
