This is the soul of American whiskey. Its distinct and unique taste comes from refining "mellowing" the freshly distilled whiskey drop by drop through 10 feet of sugar maple charcoal. The distilled whiskey is then matured in American Oak barrels hand-made by Jack Daniel's themselves. The only major distiller in the world to make their own barrels. Each batch is made from marrying 170 barrels from all levels of the barrel houses to achieve consistent colour and taste. Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying their barrels for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the winter. The American whiskey is aged in second-fill bourbon casks. It has a rich, soft sweetness which is remarkable.

In 1940 a very special bottle of barrel-aged bourbon was brought on a wild turkey hunt. The name stuck and still signifies exceptional, aged bourbon today.
