Each year the wine is made it is labelled according to the last two digits of the vintage -- hence Reserve Bin 10A, 12A, 13A and so on. Fruit is hand-picked to small bins and whole-bunch pressed. A portion of the juice is incrementally filled to barrel directly from the press and allowed to undergo a natural fermentation. Thus ...every new (40%) and seasoned (one or two-year-old) French oak barrique is its own, unique 225-litre ferment. Enhanced mouthfeel and complexity is achieved by maturation (typically for eight months) on solids, with intermittent yeast lees stirring. The 100% malolactic fermentation is also natural. Reserve Bin A has established a strong following since it was first made in 1994. It is a fresh, minerally style that occupies a place in the vanguard of modern Australian Chardonnay. The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

Chardonnay by Farr is made in an elegant, Burgundian style with fine focused acidity, linear structure, creamy mealy texture, and well integrated oak. Complex and multi-layered, it is consistently one of Australias finest Chardonnays.
