Buscemi il Bianco
Il Bianco is a blend of 70% Carricante and 30% Grecanico from 90-year-old vines. The grapes are hand-harvested, de-stemmed, and fermented on Indigenous yeasts in temperature-controlled large oak “tonneaux.”(barrels often used in Bordeaux) Malolactic fermentation is permitted naturally. The wine undergoes elevage in old oak for eight months.

Aromatics: Vibrant juicy red apple notes with yeasty character. Palate: Textural and delicious on the palate, with a lovely mousse and great intensity. This is a truly beautiful methode tradionnelle. Generosity and body from the Pinot Gris, driven and energetic sparkling perfect at the table. About the wine: Work of the soil by ploughing to encourage deep roots for a better terroir expression. The vines that make this wine are in average 40 years old. Hand-picked, prise de mousse with natural sugar from the grapes. Disgorged to order from at least 30 months on lattes. No dosage.

Cloudy Bay Te Koko is an individual expression of the sauvignon blanc grape, a complex and savoury wine that is both deliciously aromatic and richly textured. It is a full-bodied, alternative style of sauvignon blanc. Aromas of lemon thyme, mandarin blossom and stonefruit combine harmoniously with ginger spice and nutty and savoury tones, underlined by exotic tropical notes.

Grace Gris de Koshu
Koshu, Japanese indigenous Vitis Vinifera cultivation variety, is said to be a unique grape varietal in Asia. The character of Koshu is slight but pleasant bitterness originated from its pink grey skin. Fermented and aged in stainless steel tank. This wine goes well with sushi and cuisines using dashi. Brilliant pale yellow with green tone. White flower aroma with oranges such as navel orange. Smooth touch and rich fruit across the palate. From middle aroma to finish, subtle bitterness brings its distinctiveness.
Hugel et Fils Pinot Gris
This Pinot gris by Hugel et Fils is rich and rounded, although still dry, it is ideal with terrines, white meats and fish in sauce. Of all the Alsace varieties, Tokay Pinot Gris has the greatest ageing potential.
