Mr. Ken Usami, the master blender at the Shinobu Distillery, selects the selected finest malt whiskies and finish them in casks made of Japanese Oak, Mizunara Wood to create the Shin Malt Whisky range. Shin stands for integrity; one of the core principles of Samurai tradition. The 10 Year Old pure malt has significant sweet aroma of dark dried fruit, like raisin, dates come forward on the nose, and with a touch of vanilla. Sweet vanilla and dark dried fruit followed by sandalwood, and oriental spices. All natural without colouring. Non-chill filtered.

This extremely limited release of the 5 year old Bourbon Cask from White Oak is one of the rare Akashi releases. It has been matured for 5 years in a first fill bourbon barrel before being bottled at 50% ABV. It is non chill filtered & has no added colour.

Located high in the Japanese Alps in Nagano Prefecture, the Mars Shinshu distillery has beer brewery Minami Shishu Brewery as its neighbour. Both the whisky distillery and craft brewery use pure mineral water from the mountain in their facilities and production. Whisky maturation is encouraged by short hot summers, with long cold winters providing a slow and gentle maturation and a break. For the 2020 release of the Mars Komagatake IPA Cask Finish Single Malt Japanese Whisky, traditional oak barrels were used for the 3 year maturation. Following this, the single malt is aged further in casks used for the production of Indian Pale Ale. This provides a subtle and unique essence of beer character.

The Shinobu 15 year old Mizunara Cask Whisky is hand crafted by master distiller, Mr Usami. First matured in ex-Sherry and ex-Bourbon casks, it is then finished in Japanese Mizunara oak. Mizunara is an expensive oak which is hard to craft into barrels, but it imparts incredible flavours on the spirit of Shinobu. This pure malt has been maturing for no less than 15 years which has allowed the spirit to take on some very inspiring characteristics. The result is a unique fusion of flavours and dynamic explosion on the palate yet so smooth and easy to drink. Deep rich in colour and complex in flavour, mellow oak wood aromas lead to flavours of honey and molasses, hints of blueberry and deep tones of the Mizunara oak. The palate has subtle ripe fruit, lemon zest, leather and cinnamon with a hint of sweet malt and aromas of fruity oak barrels.

Founded on the shores of Lake Biwa in Nagahama City, Shiga Prefecture in 2016, Nagahama Distillery is the smallest distillery in Japan. They produce single malt whiskys and also blends carefully selected whisky purchased from overseas and ages it in Nagahama’s climate. This Amahagan World Malt Edition No.3 is a fantastic world blend produced at the Nagata distillery. It’s a smooth and mellow creation that brings gentle fruits, fragrant wood imparted by mizunara oak maturation, subtle peppery spice and sweet caramel. Miyagikyo Single Malt is described as soft and fruity.Using less peaty malt, this whisky is distilled in a pot still heated by indirect steam at a low temperature. Miyagikyo Single Malt has an elegant fruitiness and a distinctive aroma with a strong Sherry cask influence.

With this whisky, White Oak opted for a little twist in their aging process using ex Sake Casks to mature for three years. This provides a sweet and fruity profile. Full boded palate with deep sweetness, malt, and a very slight peat. Medium to long finish. Located in the city of Akashi in the Hyogo Prefecture, by the seaside of the Seto Island Sea is the White Oak Distillery. This distillery was founded in 1888 by Eigashima Shuzo and has been producing Sake and Shochu every since. In 1919, Eigashima Shuzo obtained a license to manufacture whisky and when the company moved to their current facilities in 1984, the White Oak Distillery was born.

Mars Shinshu distillery is located near Mt. Komagatake and is at the top peak of the Kiso mountain range of the Japanese Alps in Nagano Prefecture at around 800m above sea level. Pure mineral water from the mountain is used for whisky making and the distillery is surrounded by beautiful clean air. Short hot summers encourage maturation, and long cold winter gives whisky slow and gentle maturation as well as a break. Selected single malt are blended to create this 2021 edition. Very limited bottling. Whisky aged mainly in Bourbon and Sherry casks makes up the expression of this whisky. Ripe fruits note such as quince, apricot, and banana, and vanilla on the nose. The palate shows the sweetness of honey, melon, and ripe persimmon fruits, also the hazelnut character from Sherry cask. Smooth and elegant finish.

To produce this release of Akashi Single Malt Whisky, the White Oak distillery aged this whisky in Cognac barrels for 3 and a half years before refining it for 10 months in barrels of white wine from the Akashi vineyard in Yamanashi County. The result is a Single Malt without cold staining or filtration, which has a nice balance and focused on woody and fruity notes.
