Charles Heidsieck Rosé Réserve Non-Vintage
In 1822, Charles-Camille Heidsieck is born. This happy event took place 37 years after his grand-uncle founded the Champagne Heidsieck et Cie House. Little Charles grew up in the midst of grapes, loved by his mother, Emilie Henriot, and his sisters, in a family ruled by Reims traditions and Prussian rigour. Well-educated, he stands out for his integrity and elegance. At 29 years of age Charles took his destiny in hand and founded a House in his image. His audacity, adventures and the renown of his wines would make him a legend in his time. His distinctive aesthetic choices made the Maison unique and renowned amongst all others, or as was said: Typiquement Charles. In his area as well as today, to be Typiquement Charles means flouting convention, bowing to no influence, pushing the envelope and forgetting long-lasting steadfast relationships. Like the Brut Réserve, the Rosé Réserve is the result of meticulous attention and stands out for its unconventional character. The Rosé Réserve is also the result of juices from the first press only and, the wine benefits from a slow and long maturation of 3 to 4 years, far beyond the norms of the region. 80% of the year’s wines are composed of equal portions of Meunier, Chardonnay and Pinot Noir, while the 20% of reserve wines are made up of 50% Pinot Noir and 50% Chardonnay. The total of the cuvée is therefore 40% Pinot Noir, 35% Chardonnay and 25% Meunier. Each are vinified cru by cru, varietal by varietal, in stainless steel vats. To ensure the ideal balance of freshness and elegance on one hand and structure and complexity on the other, the Cellar Master bides by a House principle, intentionally selecting reserve wines that are younger than those of the Brut Réserve. The red reserve wines, from the leading Pinot Noir terroirs, date from up to 5 years before the last harvest. 5 to 6% of wines vinified in red provide tannins and the fragrance of red fruits, a base upon which the Cellar Master will subtly develop a full-bodied, voluptuous rosé.

The Brut Nature was born from an idea of the dreamed-for, perfect champagne. It is a wine that captures the freshness of the clay soils in a sunny year, a wine of truth, the testimony to an encounter, a soil, a year, free spirits and the independent spirit that runs through the Champagne House. It is a champagne that perfectly encapsulates this new exploration of a Louis Roederer terroir. The Louis Roederer et Philippe Starck Brut Nature 2015 has a yellow hue with shimmering highlights and an even flow of lively bubbles. The bouquet is pure, elegant, vertical, rich and concentrated. Nuances of ripe fruit combined with exceptional finesse: fine, delicate citrus peel and vanilla along with warmer notes of baked apple and Tarte Tatin that gradually give way to aromas of nougat. The palate offers a marked and singular contrast: it is very expressionist thanks to the broad, juicy, almost sensual texture of the clay soils in a sunny year, yet distinctly minimalist due to a fresh, pure, mineral and mouth watering backbone associated with its zero dosage. The deep Pinot noir bouquet is a blend of delicate citrus notes, red fruit and spice. After aeration, the red fruit becomes intertwined with notes of honey and gingerbread. On entry, the wine is juicy, fruity, concentrated and palate coating. The sun-drenched fruit and its slightly sweet texture give one the impression of biting into a perfectly ripe blackberry. The wine shows remarkable poise thanks to the sensual, almost powdery texture that balances the zero dosage. The end palate reveals slightly spicy, smoky and iodised notes that usher in a sensation of Umami.
Billecart-Salmon Demi-Sec Non-Vintage
Family run since the 19th century, the Billecart Champagne house delivers large number of bottles which are always well made and of the highest quality. The champagnes of Maison Billecart-Salmon are above all created thanks to the knowledge of the men who rigorously cultivate an estate of 100 hectares, obtaining grapes from an area totalling 300 hectares across 40 crus of the Champagne region. This Demi-Sec champagne is full-flavoured and is a reference for its perfect balance between sugar, alcohol and acidity. The blend of Demi-Sec is identical of the Brut Reserve however, the dosage is greater. It maintains the same finesse and elegance as this cuvée but with a greater dosage. 30% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, 30% Chardonnay sourced from the best Crus in the Champagne region, and 40% Pinot Meunier from the Vallée de la Marne and the southern slopes of Epernay. It has a beautiful, pale gold colour, emitting a constant procession of fine, regular and persistent bubbles in the glass. This Demi-Sec champagne is full-flavoured and is a reference for its perfect balance between sugar, alcohol and acidity. On the nose it is lively with a hint of delicate white flowers which evolve towards aromas of buttered brioche. Piper-Heidsieck Brut Champagne Non-Vintage
Piper Heidsieck NV is a champagne with great fruit, a good mouthful and a harmonious balance. Fresh fruit dominates the nose, predominantly pear and russet apple with a few hints of citrus fruits such as star fruit. The finish evokes flavours of fresh grapes, and a touch of aniseed, followed by a structured and a full-bodied finish. A juicy, fleshy pear and golden grape texture in the mouth, and the finish narrows to citrus and grapefruit flavours.
