Shinobu Whisky is hand crafted by the creative distiller, Mr. Usami, by carefully selecting whisky from around the world which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak in Japan. The history and evolution of the Japanese Whisky scene can be traced back to one man, Masataka Taketsuru; a man known as the 'father of Japanese whisky'. Taketsuru not only left Japan to learn the craft from the experts in Scotland, he also crafted Japan's first whisky at the Yamazaki distillery before establishing the premium whisky house of Nikka in 1934. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. The Bladnoch Bicentennial Release has been matured for 29 years in Oloroso Sherry casks and finished in Moscatel casks for a final 18 months. Only 200 bottles were made to celebrate 200 years, making this an extremely rare release. Colour: Chestnut gold. Nose: Lovely rich old Sherry aromas, acacia, honey, beeswax, orange, fruitcake, a whiff of coffee and a hint of chocolate. Palate: Soft and silky Sherry flavours. Dark chocolate, ginger, spicy citrus notes, balanced oak and a hint of ground black pepper. Finish: Warming with a hint of honeyed spiciness. Satisfying and long.

The 12 year old expression is a fine example of how the distinctively crisp, citrus character of Aberlours raw spirit is deftly softened by double cask maturation. Traditional oak and seasoned Sherry butts are both used to great effect as the mellowed spirits within are combined to deliver a subtly balanced flavour.
