True to its name our mouth-watering Zesty Limoncello combines a traditional family recipe passed down through generations from the Amalfi coast with some of our favourite foraged Australian botanicals to leave your mouth perfumed with a zesty sherbet finish. Only using carefully selected thick perfumed lemons grown at an orchard on the central coast, north of Sydney, we hand peel them, being most particular to avoid the bitter pith. Infusion of the peel into the smooth grain spirit cannot be rushed. After a month the citrus oils combine with the native botanical distillates of Lemon Aspen and Lemon Myrtle to give birth to a flavour-blend of bitter-sweet grapefruit and lime with a hint of honey and eucalyptus.

Red Leg is an authentic spiced rum from the Caribbean that is named after the Red Leg Hermit Crab which is native to the coral reefs of the area. Infused with ginger and vanilla before maturing in quality oak casks to smooth out the flavours and provide a long lasting finish. Aged in charred, American oak barrels for a minimum of two years, producing a marvellous, semi-sweet Rum that has flavours of apricot, banana and vanilla. The West Winds Gin story began back in 2009 when two mates (James Clarke and Paul 'The Doctor' White) hatched a plan to create unique styles of Australian gin using local and imported botanicals that would be cut with triple filtered Margaret River rain water. Within a month of launching, The West Winds had already made a strong impression on the gin world, winning numerous accolades at the 2011 San Francisco International Spirit Awards. 'The Sabre' - a Gold medal winner from said awards - presents a traditional British style gin led by underlying citrus and a dominance of juniper, followed by the classic coriander seed.
