The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

Chivas Regal 25 Year Old Scotch Whisky has enticing fruity aromas of sweet orange and peach, followed by notes of marzipan and nuts. Hints of rich milk chocolate orange and a fondant creaminess are the lead in to a finish that is smooth rounded and luxuriously long.

The Highland style of Whisky is generally considered to be one of the most approachable styles. Deep gold in colour with a nose of heather and wood smoke Highland Park has a deceptively complex palate that ranges from sweet maltiness to smokey peat and savoury spices.

Classic Speyside Distillery, Balvenie have blended some of their rarest reserve whiskies and aged them for 21 long years. In the final few months of the ageing process, the whisky is transferred to port casks, or pipes, to impart a luscious, creamy and silken character. Dimple 15 Year Old Scotch has fragrant tones that are almost tones of perfume mellowing to a sweet buttery aroma. Flavoursome and light, nothing spicy or harsh. The finish is delicate and maybe a gesture of dark chocolate hiding in there.

Featuring ginger cake, orange fondant, caramelised pear and brandy snaps on the nose with fresh ground coffee, chocolate ganache and cinnamon apple on the palate. Initially matured in American white oak, this limited 21 Year Old edition 2015 release is transferred into first-fill Matusalem oloroso sherry butts. The Dalmore whisky spends a decade in these exceptional casks for an outstanding finish with Oxford marmalade, macerate cherries and soft liquorice.

Double matured in port casks, this malt is a toast to the Scottish traders who braved the high seas and were instrumental in founding the port wine trade, shipping it to the world. 'Port Ruighe' (pronounced 'Portree') is the Gaelic spelling of the once bustling trading port on Skye. Talisker, one of the remotest distilleries in the world, is situated on the storm lashed Isle of Skye and has a colourful history dating back to 1830. Denounced by the local clergy, praised by none other than Robert Louis Stevenson and even suffering a still-room fire in 1960, Talisker has survived and today produces some of the smoothest and character full malts in Scotland. The 25 Year Old is sweet and mild to begin, with some acidity and saltiness. Extraordinary flavour development then envelopes the palate that becomes dry and minerally with a mild dusting of ground white pepper.
