The conditions in this coastal location affect our maturation climate and help create a smooth style of whisky that we call Sea Cask.

The nose is full of dessert wines, a little fruitiness with a good barley sweetness. The palate is quite full with more dessert wine notes, but with cereal notes and barley, a touch of malty spice and berry fruits with good oaky tannins and little herbal notes. The finish is long with a good oaked note and more noble rot.

Aged 4yrs in Sherry Barrels sourced from Frances wine region, our 100% Tasmanian Single Malt Sherry Cask is a delicate and subtle whisky, with a slight aroma of sweetened candied nectar and a dried fruit spice on the nose, with an undertone of butter. This is followed by an extremely smooth palate with sweeten white wines, raisins, pink candy and citrus warmth with just a touch of oak. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice.
