Created our farm in the small village of Allworth NSW, this boutique batch of hand-crafted gin is our homage to the tradition of gin making and the native flavours of Australia. Thirteen botanicals including native sage, myrtles, pepperberry and our signature native sugar bag honey bestow their magic upon this gin. The rare sugar bag honey is produced in small quantities by Australian native stingless bees. This inscribes a unique citrus sweetness that when distilled using a traditional copper pot still delivers a softness and depth to the gin. The result is a beautifully rich gin, at home in a traditional cocktail yet with the complexity and softness to be sipped neat over ice.

Clyde May's Alabama Style Craft Whiskey is made using local ingredients and distilled for 5 to 6 years in charred New American oak barrels. The addition of juice extract and natural essence from apples is what makes Clyde May's distinct. This is a smooth sipping whiskey displaying hints of green apple and cinnamon spice with toasty undertones. We have named this whiskey in honour of Clyde May - a moonshiner by trade and a craftsman by night, who was known for producing outstanding Alabama style whiskey.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. For 20 years The Famous Bundaberg Distillery has been aging rums in an array of different barrels. Bundaberg XF is a superior blend of aged and bourbon barrel rum that’s then given an extra finish in heavily charred oak barrels. It’s the twice that makes it nice. XF is a sublimely mellow and buttery rich sipper with hints of deep caramel, vanilla, and burnt honey creme like nothing we’ve ever tasted before. Made for moments that matter, but don’t they all. Serve neat over chunky cut ice, it’s that good.

Inspired by traditional Rock & Rye recipes, Hochstadters Slow and Low combines a master blend of aged rye whiskies, three citrus peels: lemon, grapefruit and orange before being infused with a tiny amount of 100% raw, local honey and pure cane rock candy - creating a drink similar to an Old Fashioned. The drink itself is mellow with slightly sweet flavours exceptionally balanced with citrus, grapefruit and rock candy notes. A smooth, long finish follows, reminiscing of honey, orange and rye whiskey character.
