Bakery Hill Double Wood Single Malt Australian Whisky

Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results. As with classic malts, Bakery Hill uses only malted barley [ from Tasmania ], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style. Mortlach 13 Year Old Special & Rare Single Malt Scotch Whisky Non-Vintage

Part of Diageo's stable, Mortlach enjoys a cult status amongst whisky drinkers thanks to its thick, meaty texture. That unique spirit comes from a complex and unique distillation program, which sees the new make pass through a number of stills of varying shapes and sizes. In the end, it is said that Mortlach distill their spirit 2.81 times. The complex regime results in a thick, meaty spirit - one of Scotland's thickest - and has been prized by independent bottlers and drinkers since the vaunted 16-year-old Flora & Fauna release put it into the public psyche.

Highland Park Viking Heart 15 Year Old Single Malt Scotch Whisky

Highland Park had a 15 year old on the market over a decade ago, bottled at 43%. The age statement is being revived in this re-packaged version composed of a ‘high percentage’ of first-fill European oak sherry-seasoned casks. Complimenting this are first-fill American oak sherry casks, adding flavours of vanilla and crème brûlée. Meanwhile, a small proportion of refill casks give ‘gentle’ heather peat and ‘lightly fruity’ character. Perhaps what's most striking is the vessel itself. The whisky has been filled into heavily embossed 'ceramic' style bottles, made in partnership with UK-based Wade Ceramics. The design was inspired by ancient earthenware vessels, which would have been used to store whisky a century or two ago at the distillery. The new 15 year old is set to become a permanent edition to the core range. 44% Alc./Vol.

Aberlour A'bunadh Scotch Whisky

Aberlour a'bunadh is a single batch single malt that is sourced exclusively from the Speyside region - abunadh meaning 'The Origin' in Gaelic. Straight from the cask without chill-filtration and alcohol reduction, this whisky is heavy bodied and jam packed full of flavour. Abunadh is not for the faint hearted as with each batch of Abunadh they mature the Aberlour spirit exclusively in Spanish Oloroso Sherry Butts. The nose, is simply Christmas in a glass. Dried dates combined with heavy spices, cloves star anise and cinnamon sticks with burnt orange in the back. The feeling of black cherries with luxury dark chocolate coat the mouth with sherry and oak laced into it. An extremely robust Scotch leaves a finish full of exotic spices and wonderful oaky notes.

Lagavulin 16 Year Old Scotch Whisky

This peaty Single Malt dates back to 1816, when John Johnston and Archibald Campbell each constructed a distillery on what today is the Lagavulin site. After Johnston died, Campbell consolidated the two, before selling it to malt merchant Alexander Graham. Today it continues to uphold the traditions of its past, using meticulous preparation to create powerful whisky. Their signature 16 year old malt has a strong peat, smoke and seaweed nose that is followed by a nutty complexity and light fruitiness. In the mouth characters of Charcoal, dry woodiness and iodine followed by chilli chocolate and a hint of toffee.

Laphroaig Quarter Scotch Whisky

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.
