This enables Glengoyne to produce a 21 Year old Highland Single Malt of supreme mellowness and flavour. With a definite concentrated malt base the palate is overflowing with Christmas cake, honey and dried fruit characters and all capped off with an effortless finish courtesy of the premium sherry casks used in maturation.

Glengoyne can claim to have the slowest distillation process in Scotland - a process that makes this distillery very unique, much like their positioning on the Highland/Lowland border. The 15 Year Old Single Malt is supremely complex, sweet and well rounded. There is a wonderful spicy oak finish that compliments the luscious palate that is enhanced by the process of air drying the barley, never peat dried. The hand-selected ex Sherry casks also provide a richness that continues into the finish of this fine whisky that is ideally suited to enjoying neat.

Glengoyne is a unique distillery in that the stills are located in the Scottish Highlands, yet the distillery stores are located in the Lowlands - due to the distillery being located on the border between the regions. The other unique aspect is the the barley is warm air dried rather than using peat smoke which imparts a delicate, almost floral nature to their drams. The 10 Year Old has flavours and aromas of fresh green apples, toffee and a hint of nuttiness; a trademark taste that is courtesy of Scotland's slowest distillation.

A sweeter style of Scotch, Glenkinchie is bright gold in colour and very approachable. The nose carries aromas of vanilla, citrus and wild flowery and is reflected on the palate and supported by a surprisingly creamy texture.

The process of Scotland's slowest distillation can be tasted in every dram of this Cask Strength Single Malt by Glengoyne. Hand-crafted from inception to glass, this single malt also shows the dramatic effect of warm air drying of the barley rather that using peat smoke. Bottled at the higher ABV of 58.7%, the balance between the subtle flavours imparted from the slow distillation and the power of the un-chillfiltered single malt imparts flavours of digestive biscuits, ripe bananas and a hint of pepper. Dimple 15 Year Old Scotch has fragrant tones that are almost tones of perfume mellowing to a sweet buttery aroma. Flavoursome and light, nothing spicy or harsh. The finish is delicate and maybe a gesture of dark chocolate hiding in there.
