This is a complex dram, packed with flavour and texture. 13 Years Old, from an 1891 distillery. Bottled at a punchy 46% ABV. A stubborn, sulphurous single malt, condensed in rusted worm tubs on an inhospitable rocky bluff.

A blending of malted and un-malted cereals whisky distilled partly by Pot-still and partly by Coffey Still (continuous distillation) in Scotland. After 4 years in oak wood, it has been reduced to 44% alc./vol. with Pentland Hills' water. Matured partly in Scotland and partly in France, bottled without filtration.Opalescent tint.Slight iodine fragrances with a hint of almond, vanilla roundness, floral fineness. Develops a complex floral note of rose and wallflowers with crushed green herbs, coriander and gooseberry all underpinned by mixed spice. Sugar kelp adds to the complexity and richness and gives a dry maritime note. On The PalateRefreshing gin with good balance between the bitter juniper and pine and the sweet fruit flavours of mango, grapefruit and orange. A green herb flavour has developed of crushed coriander. Distinctive and smooth with a dry, flinty taste. On The FinishOverall a long, clean finish. As the juniper and citrus fade away, sweet vanilla and black pepper remain with a gentle reminder of the sea.

It's delightfully sweet and malty at first, and after a few inhalations you may detect vanilla, toffee and banana influences coming through. Add a trickle of water to release the whisky and take in the AROMA WITH WATER; fresh and malty with darker, delicious hints of coffee and cocoa. You may smell some vanilla notes, and a touch of the fruit bowl coming through once again—this time with citrus fruits, especially lemons. Now for the TASTE WITH WATER; the smooth and mellow body has an exotic carnival feel with some gorgeous chilli spice and tropical fruit flavours, balanced with creaminess and a dark chocolate edge: a mouth-watering balance with a smooth and long finish. This whisky is certified Organic from start to finish, meeting rigorous UK Soil Association standards for growing the ingredients, distillation, maturation and bottling. Unique on launch in 2006, this organic certification is still very rare today.

A gentler, more feminine and food friendly expression that Islay lovers should get to know. Despite being the largest distillery on Islay (in terms of production anyway), nearly all of Caol Ila's output ends up in blends, so much so that until 2002 when the 12-year-old was released, independent bottlings were the only recourse for malt hunters. The distillery's gently fruity-smoky style sets it apart and comes down to the production process: "...although it receives the same spec of malt as sister distillery Lagavulin, Caol Ila’s distillation regime – longer fermentation, higher cut point, taller stills, helps to reduce the heavy phenols." Tasting note: Pale straw colour with a subtle green blush. Aromas of soft, sweet peat - smoked trout, a hint of lanolin and some baked citrus. Rounded, pure and impeccably clean from start to finish, the palate offers semi-sweet smoky-fruity-oily flavours counterpointed by super fine tannins. Perfect balance. The result is a perfect combination of vibrancy and depth. The nose is sweetly aromatic with notes of cream soda, cacao husk, sandalwood, pineapple and green almonds. In the mouth, a viscous honeyed entry precedes spicy wood aromatics along with parchment and caramelised walnuts. Adding water brings a little of that Ardmore smoke to the fore. The finish is refreshing and long. Simply sip and savour—with a dash of water to release the oils and esters—or enjoy as a long drink with soda, Japanese style.
