The Highland style of Whisky is generally considered to be one of the most approachable styles. Deep gold in colour with a nose of heather and wood smoke Highland Park has a deceptively complex palate that ranges from sweet maltiness to smokey peat and savoury spices.

The gateway to double cask maturation, Aberlour 12 year old double cask matured has balanced notes of fruits and spices. Golden amber with hints of ruby red. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Bridging the boundary of the Highlands and Lowlands, Glengoyne is a unique distillery in that they don't use peat smoke to dry their barley, rather they simply use warm air. This gives the whiskies produce a feel of grace and subtlety. Their 12 Year Old Single Malt has a nose of lemon rind and candied apples and glimmer of coconut. The palate is dense and flavoursome courtesy of the hand-selected sherry casks that also impart a textured, long lasting finish.

Ardbeg Wee Beastie has been matured for just 5 years, making it the untamed enfant terrible of the whisky world. Whereas most single malts seek the smoothness and balance of older age, Ardbeg Wee Beastie offers a monstrously smoky experience. On tasting, the whisky is not just incredibly smoky, but also surprisingly well balanced by the expert use of sherry cask maturation. Aroma: Very fresh, herbal, with hints of vanilla, pear, freshly cracked black pepper and honey-glazed ham. Rich Turkish coffee, sappy pine resin. With water, more herbal notes like vetiver and fennel, along with aniseed, green apple and leather. Taste: A rich, explosive mouthfeel with lots of chocolate, tar, creosote and smoked bacon, followed by a burst of antiseptic lozenges, eucalyptus and more aniseed. Finish: A long, salty and mouthcoating finish with hints of cocoa, fudge and savoury meats.

Located in Islays capital of the same name, Bowmore uses a combination of dedicated craftsmen, pure water, smoked peat and traditional manufacturing techniques to ensure that their whisky tastes the same as it did when it was first distilled in 1779. The 12 Year Old Single Malt has a nose of lifted lemon and honey that are bound together with the distinctive Bowmore smokiness. On the palate, the whisky is warm and delicious with subtle dark chocolate and peat smoke.

Nestled away in the far north of Scotland's Highland region is the distillery of Clynelish. Situated at Brora on the stormy North East coast, this 14 Year Old single malt has been matured in specially selected oak casks and then bottled at the full 46%. Displaying a waxy nose with a hint of sugar and florals, the whisky arrives on the palate with power and flavours of signature spice and maritime saltiness.
