A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. Once & Well is an elegant example of Chardonnay from the cool climate of Margaret River. Once & Well sets a high benchmark for this wine style. Ripe stone fruit and spring florals with hints of spice and oak on the nose, this wine has a mouth watering acidity structure that complement the richer mouthfill of the wine beautifully.

The bouquet shows great density, ripe concentrated blackcurrant, anise, black cardamom and lifted lavender with hints of black olives and plum aromas. The entry on the palate is soft and succulent whilst displaying a subtle texture with a black core of fruit including boysenberry, dark cherries and olive tapinade. The tannin and acid are seamlessly integrated from the front through to the long and lingering finish.
