Our Bespoke Gin is made from scratch in small batches in Tasmania. Carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of Tasmanian grown (fresh Lime and Rose) and internationally sourced botanicals (twelve total Botanicals)

Big, dry and peppery. Big Dry has notes of rosemary thyme, kaffir lime and sage, but what sets this gin apart is the jalapeno we use to give it that extra kick. The intenseand robust flavours complement the dry taste of the juniper berries. This style lends itself to a martini or as a G&T with a slice of jalapeno and coffee beans.

Twelve botanicals, some from our own distillery garden, make up this punchy gin. Rhubarb, bay leaf, apple and cloves give a savoury zing on the palette. This style pairs well with just about anything green and leafy, our suggestion is some fresh basil and a quality, floral tonic water. Great for cocktailmaking & mixing.

No. 8 showcases the zesty citrus flavour of South Australias very own organic Riverland oranges. This botanical gin is soft and smooth on the palette. The citrus notes are complemented by the distinct flavour of star anise and coriander seed. Enjoy with a quality, floral tonic water and a slice or two of dehydrated organic orange.

Inspired by juicy South West Australian summer fruits and warm days in Margaret River, this gin is light and thirst-quenching with a soft sweetness on the palate. Quandong is an essential element to the unique flavour profile, and brings a dryness to the palate. Pronounced botanicals include: Quandong, Fig, Apple, Berries, Citrus.

The first spirit in the World to be made from sheep whey and recent winner of Worlds Best Vodka (World Vodka Awards 2018) judged in London amongst the worlds leading Vodkas. Each Bottle is hand sprayed black and the label hand written and signed by Ryan Hartshorn (Head distiller) The spirit is made by fermenting the lactose sugar within the whey which is the waste from our sheep cheesery which is on the same farm where we milk our animals. Very Small 80-100 bottle batches. The spirit is unfiltered which is rare for a vodka. This means you will get a lot of character remaining from the whey which is a sweet nose and creamy mouth feel. This vodka is designed to drink straight at room temperature. Serve alone in a large aromatic glass or as a vodka martini with a pair of quality green olives.

Upon tasting you are welcomed with fresh pear and golden apple. Rounding out with hints of wild spice, leather and mineral freshness to finish. Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.
