The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in thier unique, handcrafted Oregon pine Solera vat. Year on year, this Solera vat is never emptied but is always kept at least half full creating a deliciously harmonious and intense whisky which gets more complex and intriguing every year.

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

Established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. Matured in a combination of both Bourbon and Sherry casks, Kilchoman Machir Bay is a well-balanced combination of rich tropical fruit, peat smoke, light vanilla and intense sweetness.

Since inception in 1881, Bunnahabhain has been producing an Islay malt a little different from most. By not heavily peating their malted barley, the resulting whisky is a clean, pure and distinctive malt. Embodying the 'gentle taste of Islay', Bunnahabhain 12 Year Old is an approachable, welcoming whisky. Ex-sherry cask influence and being non-chill filtered add to the layers of complexity exuding from this premium whisky.

One by one, The Last Great Malts of Scotland will leave their distillery gates. From Scotland's 'Bermuda Triangle' comes a mysterious and rare Single Malt, for over a century only sold in limited quantities to collectors. Matured first in bourbon barrels then Oloroso casks, there's no finer example of a sherry cask finish than our 15 Year Old. It's the final three years spent in Oloroso sherry casks that gives Bowmore 15 Year Old the rich, deep colour and robust warming finish.

The Macallan 12 Year Old Double Cask is the perfect balance of 100% sherry seasoned American and European oak, a marriage of 2 wood types. Smooth, sweet and balanced. The defining style is American oak - citrus and light oak balanced by the expected Macallan character of rich fruit and wood spice.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. The 2022 edition is arguably the best yet, and this stellar cask-strength selection from Lagavulin is a definite highlight. This is an elemental Lagavulin crafted from virgin oak and their smokiest reserves, in which rich, peaty casks lead saltiness, spice and smoke on their eternal dance with deep sweetness. This year, the decision was made to make as smoky a Lagavulin as we could.
