To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Sam Trimboli LOVES Durif. He calls it a “stunning little powerhouse grape that develops astounding complexity”. The numberplate on his car even sports the word ‘Durif’, that’s how highly he rates it. The grapes for this wine come from a small vineyard that Sam helped establish in the 1980s and is now at peak maturity.

The 2019 Trimboli “Salvatore” Trebbiano has scooped a Gold medal at the Australian Italian Varietal Awards Wine Show. The wine then went on to receive the Trophy at the same show and then…….. Chief Judges Award for Most Exciting Wine of the Show. Sa, whho has won hhundreds and hundreds of Golds over the years (plus some MAJOR Trophhies) hhas always handled this Italian white grape superbly, and you will love it every bit as much as the show judges. When the Sydney suburb of Newtown celebrated its sesquicentenary, the brewers of Young Henry were invited to brew a unique beer to showcase the unique style of Newtown.
