Eighteen months lees maturation brings a creamy texture and biscuity complexity to this zesty, lively Chardonnay dominant sparkling. Attractive aromas of grilled toast, butter and nutty cashews with subtle honeyed notes to finish.

This sparkling wine is named after our grandmother Merle "Dulcie" Spry also affectionately known as Granny Cookie. It has been made from a blend of Chardonnay and Pinot Noir. The wine shows a fine bead with a lifted floral aroma and fresh fruit forward palate with subtle yeast characteristic, it finishes with a refreshing touch of apple and citrus.

Colour: Brilliantly clear with gold/straw hues.Bouquet: Vibrant aromas of apricot and white nectarines with underlying notes of vanilla and cream. Palate: Lovely primary fruit notes of apricots, sherbert, orange citrus, and peaches and cream. Citrus drives through the palate and finishes with lemon pith and rind. A vibrant and fresh aperitive style of wine. Cellaring: The youthful freshness on release is so delicious and should be enjoyed young. Coming into the warmer months this wine is best paired with oysters, smoked salmon, and a cheese board.

The Balnaves Coonawarra Vineyard was established in 1975 and is situated at the southern end of the Coonawarra Terra Rossa strip. The Balnaves family arrived in the region in 1855 from Paisley, Scotland and opened their first general store in Penola in 1858.Balnaves have used Cabernet Sauvignon grapes to make this modern Sparkling red. This wine is a blend of complex and elegant parcels from ten vintages of reserve wines, matured in a solera system.Rich and complex with cassis, blackberry and violet, combined with mature Coonawarra Cabernet characters of chocolate, leather and truffle. Ready to drink on release, this wine will gain complexity and softness with careful cellaring.

A plentiful mousse sits atop a pale straw base that has gold tinged edges and a fine persistent bead. Toasty yeast lees scents are intermeshed with baked bread, citrus, light honeyed notes and traces of nut. The palate is tense and sculptured with racy acidity running through toast, subtly honeyed pear, yeast lees and roasted nut flavours.
