Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.

The Highland style of Whisky is generally considered to be one of the most approachable styles. Deep gold in colour with a nose of heather and wood smoke Highland Park has a deceptively complex palate that ranges from sweet maltiness to smokey peat and savoury spices.

Johnnie Walker Green Label Scotch is a blend of entirely Single Malts and has aromas of smoky vanilla oak, pepper, fresh cut grass and sandalwood on the nose. Rich mouthfeel with a delicate earthiness are balanced through to a lingering malty aftertaste. Sophisticated and full of finesse. Great to enjoy neat or on the rocks.

A gentler, more feminine and food friendly expression that Islay lovers should get to know. Despite being the largest distillery on Islay (in terms of production anyway), nearly all of Caol Ila's output ends up in blends, so much so that until 2002 when the 12-year-old was released, independent bottlings were the only recourse for malt hunters. The distillery's gently fruity-smoky style sets it apart and comes down to the production process: "...although it receives the same spec of malt as sister distillery Lagavulin, Caol Ila’s distillation regime – longer fermentation, higher cut point, taller stills, helps to reduce the heavy phenols." Tasting note: Pale straw colour with a subtle green blush. Aromas of soft, sweet peat - smoked trout, a hint of lanolin and some baked citrus. Rounded, pure and impeccably clean from start to finish, the palate offers semi-sweet smoky-fruity-oily flavours counterpointed by super fine tannins. Perfect balance. Dimple is famous for not only its unique bottle shape, but by its long standing reputation for producing one of the finest blended malts available. Using malts predominantly from Glenkinchie and Linkwood, Dimple 12 Year Old is a beautifully well-rounded Scotch with surprising depth.

Featuring ginger cake, orange fondant, caramelised pear and brandy snaps on the nose with fresh ground coffee, chocolate ganache and cinnamon apple on the palate. Initially matured in American white oak, this limited 21 Year Old edition 2015 release is transferred into first-fill Matusalem oloroso sherry butts. The Dalmore whisky spends a decade in these exceptional casks for an outstanding finish with Oxford marmalade, macerate cherries and soft liquorice.

Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish.
