A bright and complex aromatic profile displaying notes of pomegranate, dried strawberry, star anise and cranberry intermingle with hints of blue fruit, crushed violet, fresh tobacco and truffle. A finely structured palate offers both textural generosity and clarity of fruit expression. Red currant, dark cherry and cinnamon raspberry characters integrate well with supportive oak spice. Refreshing natural acidity gives the wine drive and line leading into a long and persistent finish.

The wine is tightly packed full of black fruit, spice, cloves, and liquorice. The grape tannins are soft and are beautifully integrated into the wine, giving the wine structure and adding power, balance and a savoury richness. Adam Marks established Bress in 2001 with a desire to produce wines with fruit sourced from notable regions and minimal intervention.“We believe certain grape-growing regions are better suited to particular grape varieties than others,” says winemaker Adam Marks. “The French have understood this for several centuries and some Australian wine producers are now embracing this belief.” Bress, located in Harcourt near Bendigo, Victoria, is one such producer. Adam doesn’t restrict himself to sourcing grapes from one specific region; he’d rather make the most of the diversity of climates and soils central Victoria has to offer and looks to the Yarra Valley, Macedon Ranges, Bendigo and Heathcote for the best quality fruit.

Intense aromas of white pepper, cloves, cardamom pods, ginger, Damson plums with an underlying hum of stalky complexity. A fine acid line, chewy youthful tannins and high-tone oak define the palate supporting flavours of red and black fruits and subtle herbal, charred meats and sous-bois characters. Dark brooding intensely varietal fruit characters showcasing signature aromas of cassis, anise, sarsaparilla, chocolate and freshly-ground coffee underpinned by typically classic herbal notes. Subtle structural palate with slow-building fruit washing over the bed of youthful chalky tannins. A medium bodied wine with a soft and vibrant palate. The bouquet exhibits characters of soft strawberry and aromas of red cherry that linger to a toasty oak finish. Matured in american oak for 12 months.

Yering Station Yarra Pinot Noir is a classic Pinot Noir with red/black cherry complimented with brooding earthy undertones and subtle savoury spice on the nose. The palate hints of violets and lavender. Rich black cherry spice surrounded by vanillin oak. Lovely middle palate concentration supported by fine velvet like tannins.

Its fair to say Luke Lambert hasn't looked back since 'relocating' his Syrah to the Tibooburra vineyard. This southwest sloping site lies in the southeastern corner of the Valley, near Gembrook, and might be the coolest microclimate of the Yarra. The site is expertly managed by Greg Kerr, the grower who planted the vineyard in 2001. The soils here are considered very unusual for the Yarra, comprising a seam of black volcanic topsoil over yellow clay with a smattering of granite rock throughout. Furthermore, the quality of the clonal material in Tibooburra supplies Lambert with deeper and darker Syrah fruit that also has more depth and structure. This is what drew him to the site and a good chunk of the reason the Syrah has become a touchstone example of cool-climate Yarra Shiraz.

Sourced from a vineyard nestled in the foothills of the cool southern vales of the Yarra Valley where the grey loam soils show seams of deep red volcanic clay, the 2015 Seville syrah is handpicked, fermented with a high proportion of whole bunches and receives no additions other than a small amount of sulphur dioxide at picking and bottling. It is then aged in older French barrels before being bottled unfiltered and unfined.
