Starting with our gin base, its distilled with juniper berry, coriander, angelica and liquorice root. Sloe berry mingles with Davidson plum, both fruits giving the gin a tart flavour base. This tartness is balanced by an explosion of berries, cherries and jaboticaba, otherwise known as the Brazilian grape tree. And it wouldnt be Ink Gin if it didnt star a vibrant floral infusion. The final ingredient is native Australian rosella flowers. The rosella flower, a hibiscus found in the tropical northern parts of Australia, is vibrant in colour and has a crisp, tart flavour. Veuve Capet is the first Vodka exclusively made from Chardonnay grapes (hand-harvested in the famous Côte des Blancs, in French Champagne vineyards). Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
