Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Joined by a supporting cast of single estate Australian coriander seed, Tahitian lime and lemon scented gum, the resulting spirit offers a supple start on the palate that makes way for a bold balance of citrus and herbaceous intensity that dovetails to a profoundly pine-laden dry finish.Bone Dry Gin rigorously balances a huge amount of raw power with nuance, poise and complexity to reveal an elaborate juniper experience that makes a great G&T and an even better Martini. This fruity pink gin with its all natural raspberry infused pink hue has been handcrafted for pure tastebud delight. The zero-sugar pink recipe allows for a balanced gin that isnt overly sweet, making it the perfect base for a summer cocktail or the health conscious gin lover.With a classic juniper forward nose. The palate is balanced with soft raspberry notes, leading to a dry earthy finish from the Native Limes and Blood Orange.

Archie Rose Double Malt Whisky showcases the bright, grassy fruitiness of malted rye backed up by rich aromas of Aussie fortified wine, vanilla from American oak and the smooth sweetness of local malted barley. The result is a remarkably complex whisky with notes of apricot jam smeared on toasted rye bread, fragrant oak and a hint of milk chocolate, finishing with honey-roasted macadamia nuts, ripe tropical fruits and baking spices.

Reminiscent of slow and salty days, Papa Salt is an easy-drinking gin made for sharing. Native Australian wattleseed and pink peppercorn are brightened with zesty wax flower, hibiscus, citrus peel and a hint of oyster shell. Have it short, tall or straight up. Veuve Capet is the first Vodka exclusively made from Chardonnay grapes (hand-harvested in the famous Côte des Blancs, in French Champagne vineyards). After a fivefold distillation and charcoal filtration, this vodka was assembled with perfectly pure water. Veuve Capet has a unique character, combining roundness and fruitness. Tasting notes : Eye : Perfectly crystal clear. Nose : Rich and elegant bouquet. Fresh, dominated by citrus notes, including grapefruit zest, then evolving to exotic notes of mango and guava. Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.
