Founded in 1818 by Nicolas Francois Billecart and his spouse Elizabeth Salmon in Mareuil-sur-Ay, this is one of the few houses that have remained in the same family. Seven generations on, the house is led by the very talented Francois Roland-Billecart. They espouse three principal aims are finesse, balance and elegance and the Brut rose is testament to this. Pale salmon pink in colour, the nose shows lifted red fruits and fresh pear. The Pinot has given structure to the blend while the Chardonnay has given a wonderful elegance and delicacy. A blend of 40% chardonnay, 20% Pinot Meunier, and 40% Pinot Noir. Of the Pinot component 8% is still wine from the family vineyards in Mareuil.

This delicious sparkling Moscato flaunts a pretty pink colour. A swirl of the wine reveals a highly fragrant bouquet of musk candy. The palate is rich with floral and musk stick characters, accompanied by juicy natural sweetness. Fine spritz brings the drink to life. This wine has been crafted for consumption upon its release. Serve it as an apéritif, with tapas or canapés.

Aroma/Palate: Made from the classic Hunter white varieties semillon (70%) and chardonnay (30%). The semillon provides great freshness with its citrus acidity, while the chardonnay lends this wine a wonderful balance and fullness on the palate. Serving Suggestion: Superb as an aperitif or cocktail. Also the perfect accompaniment to fine seafood and oysters. Why else would we call it Neptune? Cheers!

With a crisp pink color, this wine offers a gentle balance between acidulated aromas with notes of white blossom and small red fruit like raspberry and redcurrant. Its fine bubbles promise a delightful roundness in the mouth, which reveals all the subtlety of Pinot Noir. Underscored by a pleasant vivacity and sustained fruit, Perle d'Aurore is a delicate Crémant de Bourgogne that can be drunk in any circumstances.

The golden yellow colour of this Cremant de Bourgogne its delicate bubbles highlight the finesse of its effervescence. Its fruity flavour with citrus notes expresses a great harmony that will enhance each moment of conviviality. It presents all its elegance during aperitifs or when served with poultry with sauce. We recommend that you serve it chilled at 7-8 degrees celcius. In order to respect the grape, harvesting is done by hand. We select the grapes from our 200ha of vines and also the range of wine-growing areas that Burgundy, an ideal land for fine wines, offers. When we receive the grape harvests, we only keep the first presses, richer and more complex, for this specific wine. Thanks to our pneumatic presses, we carry out slow pressing; this exerts less pressure and therefore produces better quality results. To maintain full control over the qualities of our wines, we carry out the vinification of our Cremants de Bourgogne ourselves. We are looking for expressive Cremants de Bourgogne which is why the level of residual sugar in our wine is 10g/L. In the same vein, we produce our blends using 20 to 25% reserve wines to give the wine more complex aromas.

Its yellow in colour with hints of green and gold show its fine bubbles in a lovely light. The nose opens on white blossom then citrus, before developing pleasant buttery and brioche notes. Full and rounded in the mouth, with a certain vivacity, and complex secondary aromas that evolve over time, delighting the taste buds. The harmony and elegance of Perle d'Ivoire makes a match for a wide variety of dishes, from the simplest to the most exotic. The grapes come mainly from the north of Burgundy (Yonne, Chatillonnais) and the south (Mâconnais). Gentle pneumatic pressing respects the fruit, and separate handling of the juice produces musts of great quality. Cold settling followed by fermentation in temperature-controlled vats preserves the personality of the wine, in particular its aromas. Once the bubbles have formed in the bottles, Perle d'Ivoire ages on laths for more than 18 months, enhancing the wine and bringing great elegance. Crémant de Bourgogne has been an Appellation dOrigine Contrôlée since 1975. It covers a particularly large territory that stretches from the north of Burgundy to the south, covering the Chablis region, the Châtillonnais, the Côte de Nuits and the Côte de Beaune, the Côte Chalonnaise, the Côte Mâconnaise, and into the Beaujolais. Such diversity means that a wide range of different base wines can be created that reflect their terroir. This allows for the creation of subtle blends to achieve the perfect balance for each cuvée and to bring out the qualities of each varietal: Pinot Noir for fruit, structure and vinosity; Chardonnay for freshness and elegance; Gamay for tastiness; and Aligoté for vivacity.
