Drawing its inspiration from the Bordelaise tradition of blending multiple compatible grape varieties; This Levantine Hill Melange Traditionnel Blanc is a complex, aromatic wine that is crafted for its ageing ability. It displays subtle fruit characters of blood orange, musk, ginger, apricot and gooseberry on the nose with well-integrated savoury oak and acidity on the palate. It has a textural silky finish. A perfect foil for Munster or similar washed-rind cheese.

Many of us wine drinkers have a soft spot for Chablis. Its with great reason too, given our climate and affi nity with seafood. A little over two months ago, we were thrilled when this wine hit our shores for the first time following a selective buying trip. Once again, it showcased its undisputed quality and notoriety in our tasting sessions. Established in 1850, this small family owned domain is the proven choice of so many when it comes to great Chablis. The estate comprises a mere 45 hectares of vines scattered throughout the region, grown on the famous Kimmeridgian limestone soils. Textbook in expression and style, super fi ne and elegant, this 2013 has perfectly poised, piercing acidity. This drives superb length of flavour on the featherweight light palate. A young and approachable white wine, this wine has been crafted to last a long time in the cellar. The well balanced palate contains fresh citrus elements supported by crisp acidity, leading to a clean finale.

The wine shows an amazing length of flavor and mouthfeel with strong, clean acid on the finish and some secondary characters derived from the slight solids ferment. A great example of Hunter chardonnay with its the citrus/acid backbone, which is a benefit of no malolactic fermentation.

Ink Dry Gin was created in the Northern Rivers of NSW after a global voyage of botanical discovery. This natural floral infusion of butterfly pea flower petals gives Ink Dry Gin a remarkable and lustrous inky blue hue. Visually beautiful with changes of colour from deep blue to blush pink when mixed with tonic water or a splash of lemon juice. Distilled with a blend of traditional and exotic ingredients, the flavour of juniper , native lemon myrtle, Tasmanian pepper berries and sweet orange make for a aromatic and full flavoured experience.

Widely regarded as one of Australia's benchmark fortified wines, the Penfolds Grandfather Rare Tawny rightfully lays claim to such a title. High quality blending stock has been lovingly matured in small oak casks, and creates a wine of immense complexity and depth.

Penfolds St Henri is one of Australia's greatest red wines. The Shiraz for St Henri is selected for subtlety and elegance and the finished wine has the structure complexity for extended bottle maturation. The 1991 is a classic St Henri vintage that is good to drink until 2022.
