Crafted in Surry Hills from premium Australian molasses, sourced from the cane-fields of Queensland and Northern NSW. Fresh, light, and herbaceous, it’s yours to merge with a mixer or your most cherished cocktail.

A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

A young and approachable white wine, this wine has been crafted to last a long time in the cellar. The well balanced palate contains fresh citrus elements supported by crisp acidity, leading to a clean finale.

Flavabom Vine Dried Shiraz delivers flavour with depth and concentration. The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.
