Ink Dry Gin was created in the Northern Rivers of NSW after a global voyage of botanical discovery. Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Released with bottle age this is a wine which will still continue to evolve over many years the toasty lemony flavours becoming richer and more intense. A classic benchmark Hunter Semillon, it has earned its place in the Langtons Classification of Australian Wine.

Penfolds St Henri is one of Australia's greatest red wines. The Shiraz for St Henri is selected for subtlety and elegance and the finished wine has the structure complexity for extended bottle maturation. The 1991 is a classic St Henri vintage that is good to drink until 2022.

The wine expresses characters of lemon curd, glazed apricot Danish, ginger snap and orange blossom team with savoury underlying buckwheat, lanolin and toasty char complexity. These work in concert with a tactile calcareous interplay underpinning a silky pear-like texture. A lingering line of acidity provides the backbone but allows for the richness, weight and flavour, directing to a resounding and expansive finish. where body, flavour & palate weight co-exist with structure, texture and restrained acidity. Complex fruit characters of white nectarine, saffron, Pink Lady apple, chamomile flower, cashews and Leatherwood honey work in concert with a tactile interplay of chalk, silkiness and Beurre Bosc pear-like texture. Subtle acidity provides the backbone conveying the fruit and weight to a resounding finish.

Vat 47 from the Hunter Valley has a silky bouquet of melon stone fruit and creamy oak that is followed by a palate of extraordinary balance and length. An absolute classic and will only get better with some medium term ageing.
