The 1908 block at the HVD Vineyard was hand-picked and basket pressed, with the juice cold settled for four days before fermentation began in stainless steel tanks. The fermenting juice was then transferred to French oak barriques, 30% of which were new. The wine is balanced between primary chardonnay fruit flavours and secondary flavours, derived from the minimal solids ferment and extended yeast lees contact, resulting in this wine's texture and mouthfeel. The wine expresses characters of lemon curd, glazed apricot Danish, ginger snap and orange blossom team with savoury underlying buckwheat, lanolin and toasty char complexity. These work in concert with a tactile calcareous interplay underpinning a silky pear-like texture. A lingering line of acidity provides the backbone but allows for the richness, weight and flavour, directing to a resounding and expansive finish. where body, flavour & palate weight co-exist with structure, texture and restrained acidity. Complex fruit characters of white nectarine, saffron, Pink Lady apple, chamomile flower, cashews and Leatherwood honey work in concert with a tactile interplay of chalk, silkiness and Beurre Bosc pear-like texture. This natural floral infusion of butterfly pea flower petals gives Ink Dry Gin a remarkable and lustrous inky blue hue. Named after the sundial erected in the vineyard in 1842, Wehlener Sonnenuhr is the most famous vineyard in the Mosel. J.J Prüm owns five hectares of this precious vineyard. Extremely steep with optimal south-south west exposure, it yields fragrantly floral wines with ripe stone fruit aromas, underlying slately minerality and wonderful depth of flavour and structure. The Auslese wines are typically more reticent when young showing vivid crystalline citrus fruit and a backbone of tingling minerally acidity that will carry it gracefully for decades.

A fresh fruit-forward earlier drinking style, the fruit for the Estate Chardonnay comes from the densely planted Leongatha vineyard. Matured in approximately 20% new oak, the Estate Chardonnay exhibits vibrant ripe citrus fruit with subtle underlying toasty oak.

Incredibly complex, it is a tangle of fine-boned acid, lees complexity, pristine fruit and the most detailed use of good quality oak. Extremely enjoyable now, but will benefit from short to medium term cellaring.
