This savoury Pinot Noir is the result of an assemblage of twelve individual batches sourced from our Maroondah Highway vineyard. Subtle aromas of rhubarb, violets, earth, chervil, mace, leather, pencil shavings & cocoa nib with a stemmy note contributed by fermention with stalks. The composed elegant palate exhibits strawberry, tamarind & peach stone tartness from ingrained natural acidity, softly spreading fruit weight & sweeping talc-like tannins.

In the winery: Underwent malolactic fermentation in French oak barrels, then matured for 10 months.In the glass: Medium Pinot red.On the nose: Perfect balance of strawberry, field mushroom, black tea and oak spice.On the palate: A charming and harmonious wine with core flavours of strawberry and cream, a silken build of earthy complexity, and fine, perfectly integrated tannins. This Chardonnay has plenty of robust varietal aromas of stone-fruits and melon on the nose, which is well supported with spicy oak. The palate has a soft creamy mouthfeel while maintaining a tight structure that includes well defined fruit flavours of melon, pears and a touch of citrus acidity bound by well integrated French oak.

Savoury, woody spice adds greater interest to become quite intense in its cherry skin and stone flavours, with intriguing white mushroom and pepper notes in the finish.

WinemakingAll fruit was hand-picked and whole-bunch pressed. The cuvee taille (first cut free-run juice) was settled naturally overnight prior to racking to a mix of stainless steel tank and large format old barrels for fermentation.Fermented and aged separately in small batch lots on settled lees for nine months. The blended wine then underwent secondary fermentation in the bottle. This wine has been aged for an extended period on its autolysing yeast lees for more than four years to garner richness and complexity to its innate elegance and finesse.Winemaker's notesThe protracted growing season allowed a drawn-out ripening, resulting in an uncommon richness of flavour tempered by the abundant natural acidity contributed by the season.A bouquet of nashi pear, glazed brioche, lemon cheesecake and Amaretti buscuit. Flavours of nougat, lemon rind, jasmine and chestnut underpin a palate of steely acidity with delicated bubble, fruit weight and earthy 'sur lie' characters providing textural accompaniement, richness and creaminess to the finish. An excellent match for freshly-shucked oysters or semi-hard cow's milk cheeses.

The Chardonnay grapes used to create Vintage Blanc de Blancs were picked, pressed and then fermented to retain intense fruit flavours. The resulting wine shows a bright straw colour with light green highlights and a beautiful bead. The fragrant bouquet is perfumed with lovely aromas of cream and peaches, with light suggestions of citrus and honeysuckle. The elegant palate is filled with peachy flavours and zesty lemon acidity, offering a silky mouthfeel and a clean finish. This lighter bodied Blanc de Blancs tastes excellent with sashimi, sushi, and foie gras terrine.

This wine is straw yellow in colour with notes of vanilla, butterscotch and honeysuckle on the nose. The palate is crisp with firm acidity. This wine is garnet red in colour. The nose shows notes of cassis, black currants and touches of mint. The palate is rich and savoury with integrated tannins. It will cellar well for up to 15 years.Fruit for this wine was handpicked from the single vineyard site The Gate at the entrance of our Yarra Valley property. These vines are planted on a gentle slope facing a north-west aspect producing favorable growing conditions. Vinification occurred in open top fermenters. Hand plunging was used to aid colour and tannin extraction. It was then matured in new and seasoned French tight grained oak barrels for 12 months.320 cases producedBottled February 2018

The nose displays aromas of raspberry and herbs with an attractive earthiness. The palate shows red berries, pomegranate and some lovely forest floor characters. A fine tannin profile and bright natural acid lift provide great depth and structure to the plate. The beautiful acidity suggests this.

The wine is a vibrant brick red in colour. It displays notes of sour cherries, Christmas pudding and cinnamon on the nose.
