The 2018 season of mild weather delivered us a wine of incredible balance and charm. With a subtle and long palate, there is great vibrancy as well as plenty of ripe tannin presence, ensuring a wine suitable for cellaring. 'Our Estate vineyard Pinot Noir was grown on two quite different sites; loamy brown soils on the south facing C block, and the gravelly duplex clays of the North facing B block. 'Hand-picked on the 21st and 22nd of March the fruit was kept in the coolroom overnight. De-stemming into vats the following morning (3% whole bunch inclusion) the fruit purity of utmost importance with daily gentle wetting of the cap and CO2 (dry ice) for protection. Once fermentation commenced after the fourth day (indigenous yeasts finally co-operating), the cap was pumped over very gently twice per day, with the odd pigeage, and remained on its skins for 15 days. 'At the completion of fermentation, the wine was pressed to tank and then racked to French oak barrels (30% new) for malolactic fermentation. 10 months in oak, before being bottled.' This stands as the only wine Dave Bicknell and Nicky Harris released from the 2023 vintage, but it certainly makes its presence felt. Sourced from the 30-year-old Marianna vineyard in Coldstream, this is a Syrah that has been treated with the same delicate hand as their Pinot Noirs. It’s a style Dave does brilliantly - stripping away the heavy oak and extraction to reveal the perfume and bones of the variety. The winemaking is all about clarity. Hand-picked and optically sorted, the fruit saw about 20% whole bunches in the fermenter and spent two weeks on skins. It was then pressed off to older barriques and puncheons, meaning there is zero new oak here to hide behind. The result is incredibly fragrant - think red cherries and raspberries tangled up with roses, new leather, a hit of crushed rocks and pepper. At just 12.5% alcohol, it is light-to-medium bodied and refreshing, or as they put it, a real "drinkers' wine." It's Pinot lover's Shiraz, and that's not a pejorative.

Sourced from a vineyard nestled in the foothills of the cool southern vales of the Yarra Valley where the grey loam soils show seams of deep red volcanic clay, the 2015 Seville syrah is handpicked, fermented with a high proportion of whole bunches and receives no additions other than a small amount of sulphur dioxide at picking and bottling. It is then aged in older French barrels before being bottled unfiltered and unfined.

Winemaker Tom Carson expands beyond the Serrat estate block with Autres Terres, sourcing fruit from the historic Nenagh Park vineyard west of Yarra Glen. Planted in 1989 by viticulturist Stephen Sadlier on an east-facing slope, these mature vines provide cool-climate Yarra Valley fruit of genuine structural precision. In the winery, Carson incorporates approximately 25 to 30 per cent whole bunches during fermentation, introducing aromatic lift and fine tannic framing. Maturation takes place on lees for 11 months in large 500-litre French oak puncheons, keeping the wood footprint light and allowing the single-site identity to remain the central focus. The nose opens with wild strawberry, pomegranate, dried rose petal, and an underlying earthy spice. On the palate, expect vibrant red fruits, taut tension, and silky, detailed tannins that yield a long, energetic finish with excellent cellaring potential.
