North facing single vineyard sites maximize autumn sunlight for later ripening varietals, South facing sites favor aromatic whites and sparkling wines. Significant diurnal temperature variation during grape ripening is a distinguishing feature of this vineyard. Longer sunlight hours and temperate daytime temperatures contribute to intense fruit flavours while the sudden fall in evening temperature preserves natural acidity and structure.

This is a classic cool-climate medium bodied Australian Shiraz made from our best close planted Shiraz block with approx 4,444 vines per hectare compared to the usual Australian 1,850 vine per hectare all with of focus on high quality low yielding vines allowing the fruit characters to come to the fore. Hand-picked, small batch fermentation and maturation in French oak barrels for approx. 20 months has produced a wine with spice and ripe fruit, white pepper, cloves, cedar, orange peel, blackberry and a combination of strongly savoury and sweeter berried flavours developing into an extremelly interesting wine.

High up in the Adelaide Hills, Paracombe is owned and operated by the Drogemuller family, which it has passionately done since 1983. Sourced from both estate and selected grower fruit, Paracombe Shiraz shows wonderful ripe fruit aromas with a delicate cool-climate aspect. Notes of cherries, plums, pepper and spice are notable along with a palate of layered spicy fruit and a fine tannin structure.
