Don Fulano tequilas are made from agaves grown by fifth generation agave growers in the Jalisco highlands of Mexico. They are then distilled in the valley town of Tequila and aged masterfully. This tequila displays notes of caramelised peach, dark chocolate and nutmeg.

Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a Cost Be Damned approach to the production of every barrel, using various methods including air drying their barrels for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the winter. This Rye is a brilliant whiskey with fresh spice notes and a lingering soft finish.

A vatting of single malts aged between 12 and 27 years in oak casks and resulting from a cognac (double) distillation method with a mash exclusively made of « Malt » (germinated barley). It has been reduced to 43% alcohol by volume. Beige amber tint.

Patrón Añejo is delicate blend of uniquely aged tequilas. All the tequilas are aged in small white oak barrels for a minimum 12 months. As in many premium red wines, the blends must be adjusted for each vintage. The same care and attention is paid when blending Patrón Añejo making it smooth, distinctive and extraordinary.

Complex in its craft, but incredibly simple to enjoy as the perfect G&T. The bottle is mesmerising to look at and is often referred to as like a gin snowdome.

A super smooth gin featuring a medly of Hawkesbury grown citrus. Tahitian lime leaf and Kaffir lime leaf also grown on the distillers farm are balanced with aromatic Navelina oranges & juniper from the highest mountains of Bulgaria. Finger lime gin is hand made in micro batches of just 43L using spring water from our farm. Each bottle takes over 1 year to make and mature from growing the fruit to distilling the gin and infusing the finger lime caviar so that when you bite those little pops you get a burst of 40% alcohol gin which is different to the gin they are suspended in. Dictador 20 year old Rum 700mL is made from the fermentation of virgin sugar cane honey that has been distilled in both copper alembic and steel continuous column to achieve a smooth medium body rum. Intense dark amber with soft vanilla, smoky honey, toffee and oak on the nose. Massive flavour, strong and textured with caramel and cocoa.

Dewazakura and the local agricultural bureau developed regional sake rice called Dewa Sansan which is used in this sake. A very soft and deep flavoured style with good zingy acidity, and a clean and fresh finish.

This peaty Single Malt dates back to 1816, when John Johnston and Archibald Campbell each constructed a distillery on what today is the Lagavulin site. After Johnston died, Campbell consolidated the two, before selling it to malt merchant Alexander Graham. Today it continues to uphold the traditions of its past, using meticulous preparation to create powerful whisky. Their signature 16 year old malt has a strong peat, smoke and seaweed nose that is followed by a nutty complexity and light fruitiness. In the mouth characters of Charcoal, dry woodiness and iodine followed by chilli chocolate and a hint of toffee.

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.
