Australian Pale Malt, distilled in our towering twin copper pots and aged in first-fill ex-Bourbon American oak. Matured to an assertive, balanced complexity over four Riverland summers. Due to its Southern hemisphere birth, swirl anti-clockwise in the glass to waken its slumber and unlock sensory treasures including honey, tangerine, cardamom and brioche.

Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Joined by a supporting cast of single estate Australian coriander seed, Tahitian lime and lemon scented gum, the resulting spirit offers a supple start on the palate that makes way for a bold balance of citrus and herbaceous intensity that dovetails to a profoundly pine-laden dry finish.Bone Dry Gin rigorously balances a huge amount of raw power with nuance, poise and complexity to reveal an elaborate juniper experience that makes a great G&T and an even better Martini. Perfectly paired with Oysters.

Reminiscent of slow and salty days, Papa Salt is an easy-drinking gin made for sharing. Native Australian wattleseed and pink peppercorn are brightened with zesty wax flower, hibiscus, citrus peel and a hint of oyster shell. Have it short, tall or straight up. We'll take ours in the sun with soda water and a wedge of orange.

Symphony Nº1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky that’s full of life from start to finish and carries the uncompromised signature of Lark Whisky - a Tasmanian icon. Aroma of fresh mango, toasted pineapple, orange, vanilla and tangerines. Luscious and fruity. The palate shows peaches, apricot, even more mango, and sweet Tasmanian apples dipped in toffee. The finish is rich in fresh fruit and citrus. This whisky has length, poise and balance.

Archie Rose Double Malt Whisky showcases the bright, grassy fruitiness of malted rye backed up by rich aromas of Aussie fortified wine, vanilla from American oak and the smooth sweetness of local malted barley. The result is a remarkably complex whisky with notes of apricot jam smeared on toasted rye bread, fragrant oak and a hint of milk chocolate, finishing with honey-roasted macadamia nuts, ripe tropical fruits and baking spices.

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.

Veuve Capet is the first Vodka exclusively made from Chardonnay grapes (hand-harvested in the famous Côte des Blancs, in French Champagne vineyards). After a fivefold distillation and charcoal filtration, this vodka was assembled with perfectly pure water. Veuve Capet has a unique character, combining roundness and fruitness. Tasting notes : Eye : Perfectly crystal clear. Nose : Rich and elegant bouquet. Fresh, dominated by citrus notes, including grapefruit zest, then evolving to exotic notes of mango and guava. Mouth : Very rich and supple in the mouth. Complex aromas with citrus, the finish is particularly long, dominated by Williams pear notes.
