Ink Dry Gin was created in the Northern Rivers of NSW after a global voyage of botanical discovery. This natural floral infusion of butterfly pea flower petals gives Ink Dry Gin a remarkable and lustrous inky blue hue. Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

Replacing the traditional Campari with Applewood Red Okar and featuring Maidenii Sweet Vermouth, this rich, earthy Australian take on the classic is a joy to behold. With less acidity than traditionally associated with a Negroni and despite its high alcohol content, it is easy drinking, soft, well rounded and richly botanical driven, with 50 individual botanicals between its 3 spirit ingredients.
