High West is Utahs first distillery since 1870 and the worlds only ski-in gastro distillery. Hand-numbered labels adorn hand-blown glass bottles with wooden-topped cork stoppers. The whiskeys are all 46% and not chill-filtered. High West Rendezvous Rye is a marriage of two straight rye whiskies: an exotic 6-year-old with a 95% rye and 5% barley malt mash bill, and a very rare 16-year-old with an 80% rye, 10% corn, 10% barley mash bill.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Johnnie Walker Aged 18 Years has rich sweet fruit aromas along with toffee caramel, vanilla and a hint of smoke. The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in a handcrafted Solera vat that is never emptied, but is always kept at least half full creating a deliciously harmonious and intense whisky.

The Macallan 12 Year Old Double Cask is the perfect balance of 100% sherry seasoned American and European oak, a marriage of 2 wood types. Smooth, sweet and balanced. The defining style is American oak - citrus and light oak balanced by the expected Macallan character of rich fruit and wood spice.

Despite its long ageing, this minimum 30-month blend is not overtly sweet or oaky; it has a drier style, which is full of spice and character from its highland terroir. Cooked agave is present with a fine mixture of dried fruits, almonds and roasted coffee. There is a subtle and masked fudginess reminiscent of dark cocoa that emerges from the depth in its long and slightly dry finish.
