Iron House Distillery Port Single Malt Whisky

Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Four Roses Super Premium Kentucky Straight Bourbon Whiskey

This bourbon is one of two Four Roses products that are sold only in Japan, with the other being Four Roses Black Label. While this may seem odd, it is important to note that in February 2002, the Kirin Brewery Company of Japan purchased the Four Roses brand trademark from Diageo. Four Roses Super Premium is a completely different product than what you can buy in the U.S. While it uses the same traditional Four Roses recipes, the ratios for blending are different than what you will find in a other releases. It’s rumoured that 80% of the Bourbon must have been aged a minimum of 8 years while 20% aged 10 years or greater. The bourbon is dumped from the barrel at the Four Roses distillery in Kentucky and then sent over to Kirin in Japan for bottling and distribution. A well-balanced bourbon, it's intensely floral and a touch sweeter than most bourbons, with sweet aromas of caramel, vanilla and fruits on the nose. The palate is complex and well-balanced, sweet and fruity. The caramel and vanilla give way to lavender, apple and pear notes, with a long smooth finish.

Michter's US*1 Toasted Barrel Finish Barrel Strength Rye Whiskey

Since the 1990's, the Michter's team has been doing pioneering work to re-establish the high quality American Rye whiskey category. While the Michter's team distills according to tried and true Kentucky practices, it continually experiments as it pursues Michter's goal of making the greatest American whiskeys. Following years of research on different barrel finishes for rye whiskey, comes this release of Michter's US 1 Toasted Barrel Rye. To make it we take the US 1 Kentucky Straight Rye at barrel strength and then age it for an additional period in a second custom barrel. This second barrel is assembled from 24 month air-dried wood and then toasted to their specifications. The result is a unique rye whiskey, the strength of the barrel in this 2023 release is 110.4 proof. This Kentucky Straight Rye Whiskey has been aged in two barrels. First Barrel: Fire-charred, new American white oak barrels and Second Barrel: Toasted barrel made from 24 month air- dried wood. It was barrelled at 103 proof and after the maturation periods was bottles at 110.4 Proof. Each barrel is bottled at its particular alcohol level at the time of bottling. A nose brimming with toffee, honey, black walnut and a hint of campfire gives way to a decadent taste experience featuring dark chocolate, salted caramel, cherry and mint with pronounced spice balanced by rounded oak on the finish.

Shenk's Homestead Small Batch Kentucky Sour Mash Whiskey ( Release)

Michter's, a renowned American whiskey company, has a rich history dating back to 1753 when Swiss Mennonite farmer John Shenk founded the distillery in Schaefferstown, Pennsylvania. Shenk's whiskey was made from rye grain, which was a favourite local crop in the Pennsylvania Blue Mountain Valley where the distillery was located. During the Revolutionary War, General George Washington purchased whiskey from Shenk's to fortify his men as they hunkered down in their camp through the long, brutal winter at Valley Forge. The Michter's Pennsylvania management would later say that Michter's was "the whiskey that warmed the American Revolution." In the mid-1800s, Pennsylvania Dutchman Abraham Bomberger purchased the distillery and it became known as Bomberger's. However, the passage of Prohibition in 1919 forced the distillery, along with other American spirits producers, to shut its doors to the public. Although the distillery did reopen after the repeal of Prohibition, it changed hands many times over the next few decades and frequently occupied a precarious financial position. In 1989, with the entire American whiskey industry suffering a prolonged downturn, Michter's then-owners declared bankruptcy and abandoned the premises, leaving its Pennsylvania operations in disrepair and the Michter's name seemingly lost to history. However, in the 1990s, Joseph J. Magliocco and his consultant and mentor Richard "Dick" Newman teamed up to resurrect Michter's. Magliocco and Newman made their first major strategic decision to resurrect Michter's in Kentucky, in the heart of the modern American whiskey industry, to ensure access to the best whiskey talent and resources available. Today, Michter's has three locations in Kentucky, including a 78,000 square foot distillery in the Shively section of Louisville, the architecturally significant Fort Nelson Building on Louisville's Museum Row and 205 acres of farm land in Springfield. Michter's is renowned for producing the best whiskey possible and they continue to honour the Michter's legacy by offering the greatest American whiskey. Michter's has come a long way since its early years in Schaefferstown, Pennsylvania and its resurgence in Kentucky is a testament to the brand's commitment to quality and attention to detail. Shenk's Homestead Distillery Sour Mash Whiskey honours the legacy of historic American whiskey figure John Shenk, who in 1753 founded a distillery that was to become known as Michter's in the 20th Century. It is made in Kentucky according to the traditional Sour Mash process whereby a portion of the previously distilled whiskey mash (referred to as "setback") is added into the next batch. This full-bodied small batch whiskey is 91.2 proof. This great heritage is honoured with the release of Bomberger’s Declaration and Shenk’s Homestead which comprise the Michter’s Legacy Series. Toasting and celebrating American Whiskey History with this outstanding small batch 108 proof Kentucky Straight Bourbon Whiskey. Shenk's is a Kentucky Sour Mash Whiskey made with a substantial amount of rye. The unique character of this 2023 offering results from its being produced with malted rye in the recipe. Additionally, for its maturation we utilized two different and quite special barrel profiles: a portion of it was aged in 18-month naturally air-dried and seasoned wood with our signature toast and char profile and a portion of it was aged in special toasted French oak barrels that were made from 24-month air-dried wood sourced from the Vosges region of France. This is a warm and rich expression with highlights of spiced fruit, nougat, honey and spiced chocolate. It is dark amber in appearance with a nose of toffee with spice and vanilla. The palate is smooth and savoury, a whiskey to savour complimented by highlights of smooth spice, dried fruit, and honey.

Woodford Reserve Master's Collection Sonoma Triple Finish Bourbon Whiskey

Maker: In the 1830s the Woodford County distillery was the setting for a series of discoveries and innovative practices that would define the bourbon industry for generations to come. Today that pioneering and innovative tradition is embodied in the Woodford Reserve Distillery's Master's Collection. A tradition beginning when Master Distiller James Crow joined distillery owner Oscar Pepper to create the first true Kentucky bourbon whiskies. Distillery: The art of making fine bourbon first took place on the site of the Woodford Reserve Distillery, a National Historic Landmark, in 1812. You get that sense of history. The history of bourbon is the history of Kentucky, is the history of the United States. Distillers Chris Morris and Elizabeth McCall share the belief that the keys to making the World’s Finest Bourbon are not only time and patience, but science and art. There are five sources to Woodford Reserve's flavour grain recipe, water, fermentation, distillation, maturation. Woodford Reserve is crafted from a grain recipe of 72% corn, 18% Rye, and 10% malted barley. This recipe balances the sweetness of corn with the spice of rye, and the nuttiness of malt to build the base. The water used to craft Woodford Reserve comes directly from the distillery. It is naturally filtered by the limestone deposits under the property. Iron-free and mineral rich, it is a crucial ingredient in the process. The fermentation process is among the longest in the industry. This extra time, paired with our unique yeast strain, creates a great depth of character and a complex range of flavours. Woodford Reserve favours pot stills and column stills for a perfect balance of flavour. Finally, Woodford Reserve is matured in new, charred, white oak barrels made in house. The barrel is a key ingredient in the process, contributing flavour complexity, and balance. Winestyle/Cuvee: For this 2023 release, Master Distiller Elizabeth McCall has drawn upon prior creative releases and continued product experimentation for inspiration. In 2014, the Master’s Collection released the first Pinot Noir finished Kentucky Bourbon in history, Sonoma-Cutrer Pinot Finish. This was followed in 2016 with the first-ever American Brandy Cask finished Bourbon. The Pinot Noir and brandy barrels used for these releases were obtained from famous Sonoma County wineries. These releases featured big, bold, red and dried fruit flavors along with dark chocolate and baking spice notes. At the same time, many wineries began to age their red wines in used Woodford Reserve barrels to create a new “Bourbon Barrel Aged” genre. These wines featured rich vanilla and caramel notes. This inspired Elizabeth to experiment with various combinations of the three— including finishing Woodford Reserve in Sonoma County wine barrels that had originally been used to mature Woodford Reserve. The result, Sonoma Triple Finish, is a unique blend of Woodford Reserve Kentucky Straight Bourbon Whiskey that has been finished in Sonoma County Pinot Noir, Brandy, and former Bourbon barrels used to age red wine. Nose- Oak, New Leather, Cinnamon The scent of chocolate wafer crisps and caramel-covered Flan fills my nostrils. There’s a nice amount of oak and leather present too. Followed by creamed corn scent. Toasted pecans dusted with cinnamon and some cherries in the mix. Palate - Red Fruit, Vanilla Bean, Cedar Spice Sonoma Triple Finish is a rich, fruity, vanilla and spice-forward expression of Woodford Reserve Kentucky Straight Bourbon Whiskey. Finish - Char, Red Grape Tannins Long oak and red grape tannins, Sweet Spice

Clement Rhum Vieux Colonne Creole

Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.
