Nestled in a hidden cove near Port Askaig, Islay, the Caol Ila (pronounced Cull Eela) distillery sent its whisky to market by sea for over a hundred years. Caol Ila is the Gaelic name for the Sound of Islay, which separates the island from Jura in one of the most remote and beautiful parts of Scotland's West Coast. The distillery was founded in 1846 and is situated on the shores of the Sound, a spot originally chosen partly because of the clean water from Loch Nam Ban which still provides its main supply. The nose is creamy and lemony, before a silky-smooth medium-bodied palate packs a peaty punch. The finish is dry, sooty and very more-ish. Caol Ilas trademark smoky-antiseptic character is here. Gaelic for dawn, Caol Ila Moch is the first single malt from the distillery to be selected entirely on the basis of its taste, rather than age, cask wood, strength or finish. This single malt is an excellent introduction to peaty Islay whiskies.

The process of Scotland's slowest distillation can be tasted in every dram of this Cask Strength Single Malt by Glengoyne. Hand-crafted from inception to glass, this single malt also shows the dramatic effect of warm air drying of the barley rather that using peat smoke. Overaged Malt Whisky is a vatting of single malts aged between 12 and 27 years in oak casks and resulting from a cognac (double) distillation method with a mash exclusively made of malted barley.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

Johnnie Walker Aged 18 Years has rich sweet fruit aromas along with toffee caramel, vanilla and a hint of smoke. Its warming and sweet on the palate with dark fruits, malty cereal, smooth creamy vanilla, fragrant almonds and tangerines, and a gentle smoke developing. A lingering finish brings notes of dark chocolate, caramelised citrus peel and very light smoke.
