Hobart Whisky Ex-Sherry Matured Laphroaig Finished Single Malt Whisky
Hobart Whisky is a family-owned distillery based in Hobart, Tasmania, and their philosophy is entirely based around making whisky for them, that they love, and want to share. Established in 2014 early distillations were done with a wash from local brewery Moo Brew. In 2017 they were able to set up our brewing and fermentation system which has been utilised since. Production is done solely on a locally manufactured 1800L Knapp Lewer copper pot still. Each run is considered individually with cut decisions based purely on scent and taste. It’s all about the perfect control of the product and telling a story. Hobart Whisky predominantly mature their spirit in American oak ex-bourbon casks. This decision was made for a number of reasons, primarily, the ex-bourbon gives a great opportunity to impart their favourite flavours and characteristics in to the whisky. They have found a lot of success in matured in ex-bourbon and then finishing in other casks including fortified and wine casks, among other things. This allows to ensure the whisky matures and is balanced without picking up too many tannins, being too cask driven yet youthful. This limited release is a marriage of small carefully selected American oak ex-bourbon casks. The spirit from these barrels is then given a finishing period in barrels that matured sherry and also barrels that held Laphroaig peated whisky. The result is a whisky a whisky that has the ability to show tropical fruits and toffee but also show dark fruits and a slight nuttiness with the added satisfaction of a hint of Laphroaig peat.

This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Vanilla Cream, Cashew Nuts, Honey Quite the attention grabber! Starting off with fresh green apples and a whole lot of American oak. Initially, the oak profile is on the tight side, but with air it loosens and begins to express its buttery sweet self – cashew nuts in honey, sponge cake and vanilla cream. At the same time as the oak profile is unfolding, so is the bounty of Sullivans Cove spirit character – incredibly fruity and citrusy with mango, guava, kiwi and cantaloupe. A delicious and brilliant complimentary array of flavours. Palate - Lemon Curd, Chamomile, Cocoa Powder Wow, incredible texture and presence. Thick and waxy spirit simply bursting with candied ginger, deep chamomile, daisies and Dutch cocoa powder. The structure and body are both full and broad, initially oak-driven, but now coming into perfect balance as the spirit expresses sweet citrus and salted cantaloupe, filling out the mid-section. Wafers and sponge cake come next (with berry jam this time!), and the palate continues to unfold with orange sherbet, Turkish delight, more Dutch cocoa powder and a beautiful bright herbal and floral layer. Finish - Chocolatey, Warm Citrus, Savoury Notes Leading the finish is the rich, chocolaty side of American oak, swiftly accompanied by the delightful warmth of citrus and fruity notes, particularly guava, reminiscent of the nose. As the finish unfolds, the herbal and bright elements intensify, and impressions of watermelon candies, daisy stems, subtle savoury hints akin to a hot chocolate stout, all rest upon a broad structure supported by beautifully firm tannins. Starward Two-Fold Double Grain Whisky
Starward Two-Fold Double Grain Whisky is a flavourful Australian whisky matured in Australian red wine barrels. This ambitious expression marries two quintessentially Australian grains - wheat and malted barley - and elementally matures them in Melbourne's intensely reactive climate. Two-Fold promises to deliver an approachable whisky, with bright aromas of spiced vanilla, tropical fruits and cereals. The palate is rounded carrying hints of red apples and berries. The finish is delicate with soft tannins and lingering red fruits. This is a whisky for any occasion; neat by the fire, on ice to celebrate, mixed up in a perfect Manhattan. Two-Fold is made for the sharing cabinet, so enjoy with friends and family. David Vitale, founder, started off with a simple vision; create a uniquely Australian whisky to bring forth to the world with pride. Born and bred in Melbourne, David was inspired to create a spirit that reflects his home town – from its culture to it’s famed ‘four seasons in a day’ temperature swings. It is a city surrounded by some of Australia’s leading wine regions – all within a day’s drive – and is regarded as the microbrewing capital of Australia. It seems obvious now that all the ingredients for a modern Australian whisky were close by. But, in 2007, when he first started, the idea of an approachable, affordable Australian whisky - served neat or as a cocktail with food - was a big leap of faith. While Australia had a well-established small-scale ultra-premium whisky scene, David pioneered an affordable, approachable and distinctly Australian whisky. The result is STARWARD. A modern Australian whisky, elementally matured for three “Melbourne years” in Australian wine barrels, that pushes the boundaries of what whisky can be.
