Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. Great Southern Distillery Limeburners American Oak Single Malt Whisky
When first released in early 2016 this expression became an instant classic and sold out in record time. This Limeburners American Oak Single Malt Whisky was matured in refill American oak bourbon barrels. It has no added colouring and is non-chill filtered and is a lighter, very smooth style of single malt whisky, which really allows the malted barley flavours and ex-bourbon cask influence to shine through. Exhibiting gentle citrus and honey aromas, American Oak has a bright, golden colour with a bold and full flavour. Upfront spice with vanilla notes and a medium to long finish.
Sullivans Cove Old & Rare American Oak Second Fill Single Single Malt Whisky (TD0079)
Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.” Well said. And the way the oak develops during the finish, just when you don’t want to let go, keeping the show going; it brings another season to binge on, and we love it. Great Southern Distillery Limeburners Peated Small Batch Single Malt Whisky
Made and hand bottled at the Great Southern Distillery in Albany on the harbour’s edge in Albany, this complex and elegant single malt whisky is distilled in traditional small batch copper pot stills from premium local barley. This whisky has been made using a peat from near the ‘Valley of the Giants’ and has been matured in an ex-bourbon American oak cask. Exhibiting spice and floral aromas when neat, a splash of water unleashes malted barley, and intense complex smoky aromas. Limeburners Peated has a full bodied taste and a superb smooth finish. Limeburners is distinctly Australian and unique.
Hobart Whisky Ex-Sherry Matured Laphroaig Finished Single Malt Whisky
Hobart Whisky is a family-owned distillery based in Hobart, Tasmania, and their philosophy is entirely based around making whisky for them, that they love, and want to share. Established in 2014 early distillations were done with a wash from local brewery Moo Brew. In 2017 they were able to set up our brewing and fermentation system which has been utilised since. Production is done solely on a locally manufactured 1800L Knapp Lewer copper pot still. Each run is considered individually with cut decisions based purely on scent and taste. It’s all about the perfect control of the product and telling a story. Hobart Whisky predominantly mature their spirit in American oak ex-bourbon casks. This decision was made for a number of reasons, primarily, the ex-bourbon gives a great opportunity to impart their favourite flavours and characteristics in to the whisky. They have found a lot of success in matured in ex-bourbon and then finishing in other casks including fortified and wine casks, among other things. This allows to ensure the whisky matures and is balanced without picking up too many tannins, being too cask driven yet youthful. This limited release is a marriage of small carefully selected American oak ex-bourbon casks. The spirit from these barrels is then given a finishing period in barrels that matured sherry and also barrels that held Laphroaig peated whisky. The result is a whisky a whisky that has the ability to show tropical fruits and toffee but also show dark fruits and a slight nuttiness with the added satisfaction of a hint of Laphroaig peat.
