This combination of high-quality water and grain is the foundation of all Sullivans Cove whiskies. All Sullivans Cove whiskies are made from 100% Tasmanian malted barley. The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before entering the casks for ageing. Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years. Lark is Tasmanian whisky, proudly unique in character and style. Entirely made by hand with no more than 100 litres at a time, Lark's 58% Cask Strength expression is widely regarded as 'one of the world's best cask strength whiskies', winning numerous international medals and trophies. Surprisingly easy to drink at this strength, the whisky driven by a more rich malty alcohol, perfectly dominating the floral and crýme caramel notes to reveal layers of Tasmanian malt bursting across the palate, finishing with lengthy maple syrup sweet notes of highland peat and oily spice.

Hellyers Road Distillery, situated on the picturesque northern Tasmanian coast line, was established in 1997 and is Australia's largest distiller of Australian single malt whisky. Named after Henry Hellyer who was one of the first explorers to set foot in the interior north of the then Van Dieman's Land. This 10 Year Old single malt whisky is Hellyers flagship product and is distilled from Tasmanian grown malted barley, pure rainwater and yeast. American White Oak barrels are used to mature this bespoke malt that delivers a smooth and balanced taste.

NED is distilled from select Australian grain and matured until it has a boldness and character that befits its name. This limited First Batch is fiercely independent and unlike anything that has come before it.

The nose is drawn to delicate citrus tones of lemon and orange, while the palate is enveloped in a vanilla sweetness that lingers like a boiled sweet before retreating to a warm, soothing finish. A delightfully rewarding single malt experience, further enhanced by its time in the cask.
