Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

The 23rd Street distiller individually infuses ten botanicals including traditional juniper and coriander, complemented by zesty local citrus. Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

Just like your favourite pair of jeans, Dry Cut Gin just fits. A uniquely modern dry gin with a balanced punch of citrus that is a nod to the Australian climate. We use fresh lemon and orange rind, lemon myrtle and a selection of five other botanicals to create a gin that sits comfortably in tonic or naked with soda.Garnish with rosemary, sage, thyme, dill, dehydrated lime, dehydrated orange, wedge fresh lemon, orange and juniper berries.

What’s your whim? Say it with Gin. Our Violet Gin is the mood ring of beverages. Transform the broody blues of Butterfly Pea flower to ultraviolet with tonic. A bouquet of heady Australian native botanicals including lemon myrtle, finger lime and pepper berry abounds. On the palate, layers of intriguing flavour unfold, from familiar juniper to juicy finger lime, mellow wattle seed and lingering zest and peppery spice.

Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

The original. Our Sydney Dry Gin is unlike any other. We steep 10 botanicals in Australian wheat spirit, which is then distilled in our little German copper still. You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. Perfect in a strong G&T, a gin and soda, or a dry martini. For more delicious results, serve with a strawberry.

Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.
