Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting. Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

This stunning looking Gin bottle is backed up by a host of international awards including Double Gold medals at the recent San Francisco World Spirits Competition 2017. The 23rd Street distiller individually infuses ten botanicals including traditional juniper and coriander, complemented by zesty local citrus. Careful blending is key, creating a layered palate and full-bodied mouthfeel.

Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.
