Couple this with the certified organic vineyards that are tended by hand and you have a perfect recipe for a bold and full-bodied Shiraz; the Dragon's Blood McLaren Vale Shiraz. Choosing sites that offer the greatest varietal expression, concentration and finesse, the wine then saw maturation in French oak of sizes ranging from barriques (225L) to puncheons (500L) for 12 months. The result is a foreboding Shiraz that displays notes of blueberry, blackcurrant, aniseed and balancing earthen touch. Ideal served on its own to fully appreciate the rich and complex flavours but also at home when paired with French cutlets and slow cooked duck.

Pirramimma Stock's Hill Shiraz has bright cherry aromas with sweet oak and a hint of spice give this wine real appeal on the nose. The palate is rich with flavours of blackberry and chocolate balanced by grippy tannins. Great value!

The Maxwell Silver Hammer Shiraz delivers all the hallmarks that make the combination of this variety and the McLaren Vale region so famous. The palate is luscious and shows generous fruit flavours of raspberry and plum and complex notes of vanilla bean and dried herbs. File silky tannins give structure and length, creating a seamless and approachable wine.

Vibrant in colour the nose shows plum and berry fruit with spice pepper and well integrated oak. The palate has good fruit weight with attractive berry flavours and a fine tannin finish.

Their Shiraz is typical McLaren Vale with dark fruit, fresh meat and milk chocolate that can be found on the nose as well as hints of marshmallow weed and spice if you look carefully. Oliver's Taranga have a long and distinguished history in the McLaren Vale and are custodians of some of the premier vineyard land in the region. Corrina Wright is now the winemaking brain behind this progressive winery and her Shiraz is a modern masterstroke. Smoke and bacon on the nose with sweet and savoury tones. Soft fruit flavours luscious mouth feel and great length to this wine. Delicious.

Their Giant Squid Ink Shiraz shows brilliant purple hues and violets on the nose and with brilliant use of French Oak, the palate is smooth, velvety and concentrated with all the berry fruit one can handle.

Church Block first appeared back in 1972 under the watchful eye of Greg Trott and was taken by one of the original vineyards that ran alongside the small Bethany Church, across the road from Wirra Wirra's old ironstone cellars. Over the last 4 decades, it has become one of Australia's favourites. The 2005 Church Block is showing just what a little patience can do. After six years, the velvet texture is the dominant feature with integrated tannin taking a backseat.
