From vines over or approaching 100 years old, this was open - fermented with wild yeast, then spent 18 months in some new, mainly old, French oak barriques. Concentration shows in the colour and aroma of this shiraz, as well as the powerful, full-bodied palate, which shows guts and grip, if not great elegance. Dense chocolate and blackberry aromas are a feauture of this beautiful wine.

Grapes for this Shiraz are sourced from our growers in the Barossa Valley. The well ripened grapes are carefully destemmed and crushed to fermenters where they are macerated in a way to minimise extraction of hard tannins. All providing a rich and generous nose and mouthfeel. This is achieved with less vigorous maceration and lower fermentation temperatures. Maturation then takes place with American and French oak before blending and bottling. The grapes for our Shiraz come from our loyal growers throughout the Barossa Valley. Soils, site and viticultural practices vary but the one common factor in these vineyards is the unmistakable generosity that shines through in the wine.

The Old Salem Church was built with humble claystone in 1856. The church was destroyed in the flood of 1946, Old Salem lives on in the memorial stone laid in our neighbouring vineyard and in the grapes harvested from it. These are blended with carefully selected premium grapes from other longstanding Barossa family growers to create this distinctive Barossa Shiraz. This rich Shiraz has an intense nose of satsuma plum, blackberry and hints of spice. The palate holds concentrated flavours of plum, dark berries, dark chocolate and aniseed, while new and seasoned French oak provides balance and support to the intensity of the fruit

This Shiraz is a brilliant ruby red colour with a nose of freshly picked blackberry and rich red fruit, mulberry, white pepper, and rainier cherry, Deep flavours of berries and cherry, along with a subtle hint of nutmeg to finish.

Aromas A characterful wine with aromas of blackcurrant, blueberry, dark plums, dark boiled lollies, pomegranate, with hints of coconut and cedar oak. Taste True to the Barossa style of a full bodied wine and jam-packed flavours of cherries and red liquorice, balanced with integrated oak providing length and structure. Red wine artisan, Marco Cirillo, has produced a single vineyard Shiraz with as minimal intervention as possible. Using 90% whole berry and 10% whole bunch as well as natural yeast fermentation without fining or filtering, this Shiraz screams of its terroir. Expressive fruit up front of plums and red berries with small waft of leafy characters. The palate dances across the tongue without hindrance from over use of oak and is a supreme wine for the price.
